OK Karen let's see how we go this time. My second batch was far superior to the first one anyway so hopefully, was worth the wait.
Chocolate Rice Pudding - a conversion and alteration of a recipe by Giada De Laurentiis (for the better but don't tell her ;))
1.13 litres milk (I used skim)
150g arborio rice
110g sugar
1.5 tspns orange zest, finely chopped
1 tspn vanilla essence
l lightly beaten egg
1.5 tblspns orange liqueur (I used Triple Sec)
1 cup milk chocolate bits (sorry forgot to weigh them)
Place the milk and rice in the TM bowl and cook 35 mins 90o on Reverse, speed 1.
Add the sugar, zest, vanilla and egg through the lid and continue to mix for a few seconds.
Add liqueur and choc bits and stir on Reverse, 90o Speed 2 for 1 minute.
Allow the mixture to sit for 10 minutes. Stir on reverse every 3 minutes for 20 seconds.
Spoon into serving bowls - glass stemmed ones look nice.
Refrigerate 3 hours.
Can be made up to a day ahead.

Here's another version of Chocolate Rice Pudding - more child friendly.
150g arborio rice
980 mls milk
2 Tblspns cocoa powder
1 teaspn vanilla paste or extract
70g castor sugar
8 large chocolate melts
2 tblspns toasted flaked almonds to serve (optional)
Place the milk, cocoa powder, vanilla and castor sugar in the TM bowl and whisk 10 sec/speed 6.
Add the rice which has been rinsed under running water and cook 40 mins/90o/speed 1/reverse.
Drop the chocolate melts into the pudding through the hole in the lid and stir on speed 1/reverse for 30 sec to melt them.
It is quite liquidy at this point so rest the pudding until it thickens up (just like a risotto would).

The child friendly one sounds great..... the only arborio rice I have in the cubard is pre cooked packaged stuff. Do you think I could use it?

Hello amie78, welcome to the forum. I've never used pre-cooked packaged rice so I don't know the answer to that one I'm afraid. Someone else might though.

Thanks Judy i might just cook the rice as per the directions on the pkt and see what happens.
