Title: Delicious Vegetable Quiche

Dish: Vegetable Quiche
Serving Size: 4
Ingredients:
1 Table spoon butter
3 cloves garlic, chopped
1 small onion, chopped
1 cup chopped fresh spinach
1/2 cup fresh chopped mushrooms
1/2 cup fresh chopped red bell pepper
4 oz  package herb and garlic feta, crumbled
1 cup  shredded Cheddar cheese
salt and pepper to taste
1 (9 inch) unbaked deep dish pie crust (use the Thermomix all purpose pie crust recipe)
4 eggs, beaten
3/4 cup milk
salt and pepper to taste


Preparation:
Preheat oven to 375oF (180oC)

1) Make pie crust for one 9 inch deep dish pie dish using Everyday Cooking Pie Crust recipe.

2)Saute onion, garlic and bell pepper in the melted butter in pan over medium heat. Saute until onion is golden brown and bell pepper is cooked. Salt and pepper to taste. 

3) Mix in spinach and mushrooms and let cook for another minute or so (if you cook the mushrooms too long they will become watery)

4)Plop on the feta and 1/2 the cheddar cheese and let melt into the mix

5)Whip milk and eggs in Thermomix using butterfly until fluffy, mixing in a pinch of salt and pepper.

6) Pour vegetable mix into bottom of pie crust then pour beaten eggs on top. If you can, try to let some of the spinach rise into and mix with the egg.

7)Bake for 15 minutes, then place remaining cheddar on top.

8)Bake for an additional 35 to 40 minutes.

9)Let sit 10 minutes before serving.

This was my first Thermomix dish. It was delicious! You can vary in what vegetables you want as well as the use of cheese. (it's much healthier without all the cheese). I made two and they came out beautifully.

Tips/Hints:
Depending on your dish size, you might feel like cooking up a little extra vegetable. If you make a different vegetarian variation that's good, please share it!

Changed the temp for us Aussies (we don't tend to speak Farenheit - but some of us oldies can interpret ;) )

This looks delicious. We love quiche and I'm always looking for slightly different ones. Having feta in it is a big plus as I adore feta.

Cheese can be coarsely "grated" in TM, and the garlic, onion, and capsicum can be roughly chopped on Speed 5 for a couple of seconds, scrape down bowl, and repeat so that they are coarsely chopped.

A couple of queries:

Do you blind bake the pastry before adding the mixture?

115g feta cheese = 4oz?

Actually I just made this for lunch - I did blind bake the pastry abit as I thought that maybe the pastry would be soggy otherwise, and as I wasn't sure about the ounce conversion used about 90g of the feta. Found that with the blind baking, it only needed 25 minutes to cook for Step 8.

The two completely ravenous but unbiased judges were very quick to rate it an outstanding 10, and the comment "probably the best quiche I have ever tasted" means that I'll probably make this to take over to a friends house on the weekend when we watch The Grand Final  ;D ;D ;D

Glad everyones enjoying it! Thanks for the tip on blind baking the crust, although I didn't end up with a soggy crust, it was a little soft on the bottom so I'll definitely do that next time. I'm a big quiche fan as well :)

I had  quite a bit of trouble sourcing the herb and garlic feta for this.
I chopped the onion and garlic in the TMX. Also made the pastry in it and blind baked it for about 7 minutes. I shredded the cheddar in the TMX too.
The idea of adding the cheeses to the vegie mix seemed new to me and I thought it would all stick but it didn't.

It was a lovely tasting quiche and quite different owing to the feta.

Ordinary feta would do - add some fresh herbs (parsley, thyme, oregano, margorma - or small amt of dried) would do the same - for next time.

yeah, I found a premade garlic herb feta at our grocery store. Can't remember the brand but I imagine fresh herbs and garlic is even better!

made this again last night, and used the Sour Cream Pastry (http://www.forumthermomix.com/index.php?topic=3588.0) instead of shortcrust. It is sooooooooooooooooooooo yummy, it caused an argument because there wasn't enough for second helpings :D

We've had it before and really loved it. I'll try it with the sour cream pastry this time. (using yoghurt). Thanks for bumping it. I have it printed off and filed but there is so much yummy food to try that I don't get back to the favourites very often.

this has a star next to the name, as its a favourite. probably don't cook it as often as i would like, because i'm always trying out new recipes all the time too. i am always amused at people who have the same food week in, week out and know for instance what is on such and such a night  :D (apologies if I offended anyone, i didn't intend to). it always a daily spur of the moment thing when i see the recipe - thank goodness i don't live too far away from the shop  ;D

This is our dinner tonight.  I grated the cheese first, put it aside, then cut onion and vege (red capsicum and zucchini) and cook it 100oC for 2 min at 1, then put sliced mushroom and baby spinach.  For base using EDC recipe.  Zucchini make it a bit runny, and maybe my pie dish is a bit smaller (22cm), it's already full before egg,  Decided to use one egg only and a slosh of milk.  Yummy!

I made cream cheese pastry (http://www.forumthermomix.com/index.php?topic=4620.0) for this one, and lined it in a big 22cm spring form tin, blind baked on 200c for 10 minutes, removed beads and baked a further 5 minutes.

To the filling, I added extra veg, like celery, zucchini, carrot, chopped sundried tomatoes - as well as ingredients listed.
Chopped all in jug (did the harder veg first, then added the rest).
Mixed in all the tasty cheese, added a few cubes of marinated fetta, and crumbled extra fetta on top once egg/milk added.

I agree with everyone who's made this, it's delicious.Made Cookie's "magic" Cream Cheese Pastry for the base.I didn't bake blind the pastry case,I just preheated a baking tray in the oven,then placed the completed quiche on the hot tray to cook.Definitely make this again. ;D

We had this last night.
Unfortunately we had no feta, so I used 1/2 cup grated cheddar, 1/2 cup grated parmesan and 2 extra eggs. It set beautifully, and DH had THIRDS!

I'm just doing my menu plan for the week before I go shopping. I'd forgotten about this and it is so nice. We usually have a quiche in some form or other each week. This will be this weeks one.

Thanks Judy.I found some spinach that I had cooked and frozen in the freezer and added a red capsicum and mushrooms,but you could use any veg you had in your fridge as Maddy did. :)

Loved this recipe. I used the sour cream pastry and it was perfect for this.  Even though it looks a bit undone in the photos, it was just lovely.
I used the TM for the pastry and chopping of the veg.  Great flavours.  Thank you. :D

I also made this, well a variation of this with the cream cheese pastry. I must say I was pretty chuffed with my 1st lot of pastry......EVER. Turned out brilliantly, thanks for the great recipes ladies 😘
