Name of Recipe: Sweet Chilli Carrot Salad
This salad is wonderfully fast and easy, and delicious, too. It is very low in oil, and the oil used is healthy olive oil, so this is a great salad for a health and/or weight conscious lunch.
A Healthy Eating recipe ;D
Number of People: 4
Ingredients:
4 large carrots (350 gm approx.) cut in chunks
20 gm olive oil
1 tsp cider vinegar
30 gm sweet chilli dipping sauce
Salt and pepper to taste
Preparation:
Add/weigh all ingredients to the Thermomix bowl. Remove the measuring cup and hold the Thermomix spatula in the hole of the lid (the built in guard on the spatula means that it cannot touch the blades). Turn to Speed 4 for 7 seconds only, stirring ingredients anti-clockwise to keep them down on the blades.
That's all there is to it!
Chef's Tips
Add a few sprigs of parsley with the other ingredients if you wish to add a little iron and green colour to the salad.

CarolineW - I made this for lunch yesterday, and really enjoyed it. I had a beetroot floating around too, so I flung that in with the carrots. Thanks for sharing the recipe.

Thanks for sharing the recipe.
Great to be able to share it -wish I had Bimby's energy - she is currently translating Spanish recipes into Italian and has been running online Thermomix cooking classes (in Italian sorry :( ) .
I love carrot salad and do it with Moroccan spices, currants, lemon juice, whatever is available. A salad in seconds. ;D ;D Which is probably what I should Simply Fill my face with.

This sounds delish!! I'm really keen to try this. Isn't there a homemade sweet chilli dipping sauce recipe too that we can use? :)

Once you have read all the new messages here, is there a way to clear or delete them, or just leave the list and it will automatically clear after a while?

Mine just clear automatically Marina when I click onto 'show unread posts since last visit' again after I've read a few postings.
