Title: Fresh Coconut dessert ideas?

Hi Everyone, its my first post!
we are having a Jamie Oliver yummo coconut laksa soup for dinner and am going to be left with nearly a whole fresh coconut- does anyone have any recipes for desserts using fresh coconut? on our honeymoon in fiji we ate the most DELECTABLE coconut pie, i wish i knew how to make it!

Also, have you thought about making your own coconut milk/cream for future recipes and freezing it? I think it would be pretty easy with the TM.

What about coconut icecream?  The idea of making coconut cream/milk is sound - freezes well.
