Title: Meat stock concentrate (beef)

I made a batch of this stock concentrate back in early May and the recipe in the Full Steam Ahead cookbook says it lasts for a few months. I still have enough to make up 12 litres of liquid stock and was wondering if it is too late to freeze it.  Obviously I don't use a lot of beef stock as I gave some away when I made it and after all this time there is still heaps there. Next time I make it, I will definitely freeze it in 1 teaspoon quantities and perhaps only make 1/2 the quantity.

I was wondering this very same thing reading the recipe yesterday. There is alot of salt in it but yes the meat part is a bit of a worry. How long did they kept their salty meat 100yrs ago - months? :-\

probably longer, that's how they preserved it travel overseas wasn't it? adn that was without refridgeration...

Yes Thermomixer but now it has been packed away in the freezer in 1 teaspoon lots which I should have done when I first made it. Now that summer is almost here, I am not far off needing some new vegie stock too but won't be using as much during the hotter months so I think I will head down that path & freeze that in 1 tblspn lots and use less salt. We didn't get sick after eating the last lot of beef stock before I froze it so it was obviously OK (it was 4 months old)

At least you know waht has gone into it and so it is less of a gamble than some of the purchased foods.

At our age Thermomixer, I don't think it really matters but I do it because I CAN and if it gives me a few more years, that is a bonus  ;D ;D ;D

I hope so Thermomixer, I have sooo many recipes I want to try yet.  Wonder if you would be allowed to take your TMX into a nursing home with you...... :P :P :P :P

I am sure there is an artist on this forum somewhere who would draw that cartoon.  We could have a contest to see who would write the best "balloon" for it .  I'm gunna write a codicle to my living will making sure I can take mine with me. My children better choose the right nursing home!

hi guys just reading your review judy and am considering making this tonight.  just wondering what cut of meat did you use? considering that it cooks for 30 mins on varoma i was thinking just a cheaper cut but wasnt sure...

Em I don't know about the others but I only use a cheap cut as it is the flavour you need at the end of it all.

Yes, like Kathryn I only used a cheap cut - actually it was all the bits & pieces I ended up with after cutting all the fat off a batch of meat.  I then went through it again and got enough meat to make the stock.  At least it didn't get wasted like it normally does.

thanks will give it a go, i only have rump steak in the freezer so will just wait til i can get to the shop and get some cheaper cut of meat.
on a side note my email notifications arent working, i never get an email saying there has been a reply to posts anymore...dont know why

Have you been into your profile em?  Under 'Modify Profile' click on Notifications & Email and see if all boxes are ticked.

yes have checked all that its all ticked... wen i click on the notify button in a post it asks me if i want to disable notifications so clearly i should be receiving them.. but this is wat it says at the bottom of the notifications/emails section on my profile.."You aren't receiving notifications on any boards right now.
To request notifications from a specific board, click the "notify" button in the index of that board."
i dont get it i used to always just receive notifications automatically.. and like i said all the boxes are ticked for that to happen.

OK, so there are 4 ticks.  Do you have the words 'replies & moderation' highlighted in the last box on that page?

I just had a fiddle with the nofify button to understand where you are coming from em and mine said the same thing. I then right clicked on the 'Notify' button, clicked on 'Open link' (this will just take you back to this thread). Left click on "notify' again and it will ask you if you are sure you wish to enable notification of new replies for this topic. Click OK.  It is worth a try (bumping the computer's memory) but if you still don't get any email notifications I would then direct the question at MM with the info you have given us and see if he can work it out for you.
