Hi all
Has anyone got a recipe for basil pesto? I think I've got the ingredients, just need a recipe!

It sure is, it's the only one I use now. Tastes lovely and lasts well-usually.

Thanks for your help. I made the EDC recipe last night. Do you put that much oil in? It just seemed really runny and oily, so after making it I poured at least half the oil back off again.
Does anyone else wish that some recipes used mls or cups instead of weight? I couldn't weigh the oil with Thermomix because I had to add it gradually. Is there a trick I'm missing?

put a container on the lid, hit the weight button, now weigh your oil, then you can drizzle it in from the container :)
i've only made the pesto once and didn't find it too much oil that i remember.

Weigh the oil in a jug on top of the lid and then pour it in when required.

I just made the EDC pesto.
However..... 250g of basil leaves!!!! How many bunches is that???!!! I picked the leaves off my bunch and I had about 30g!!! Plus I also only had about 40g pine nuts. BUt I had already done the 40g parmesan and 5, yes 5, cloves of garlic. So my little jar of pesto is strong enough to protect the whole Sydney basin from vampire attack! Rest easy Sydney........

LOL - I use smaller quantities - that is a serious amount.

The one in Fast and Easy Cooking is the real deal - I use it regularly.
80g basil leaves
50g parmesan cheese
30g pecorino cheese
30g pine nuts
1 clove garlic
150g evoo
salt to taste
Wash and dry leaves; don't bruise them. Put everything except oil in bowl except oil and salt and mix 20s, speed 7. Scrape down the sides, add oil and salt and mix 20s, speed 7. Stick nose in bowl and breathe deeply - absolute heaven ;D

this is weird - my EDC recipe is totally different from the one posted here.
Now I dont know how much of each ingredient to use ???

I have an early edition of the EDC auds - are you looking at the Basil Pesto Dip or the Basil & Spinach Pesto?

Obviously a dip is quite different to a pesto auds so if it is a dip you want, do the EDC one as there are no negative comments made in my book next to the recipe - 'good as is' is what I have written there.

ok - gonna give this a go as well. I will toast the pine nuts first though as I think it will give a better flavour.
