Brown rice waffles with pure maple syrup and strawberries.

This is one of my favourite recipes - it's very versatile, you can use so many different kinds of grains, and it just works so well!  These are made using the 'blender batter baking' method outlined in Sue Gregg's 'Breakfast' cookbook. You use the whole, raw grain to make these, not flour.  It's best to start them the night before so you can let the batter sit overnight to increase digestibility.  But if you forget, they'll still work.  :)  These photos are of waffles and pancakes made with brown rice - no other grain or flour.  Notice how light and white they are - I prefer these to wheat or spelt ones, as they are so much heavier.  If you can't have egg, just leave it out - they still work fine.  This recipe makes enough for our family of 6, with usually some left over for morning tea!  ;)

Brown rice pancakes with Rapadura and lemon juice.

1. Place in Thermomix & blend on speed 9 for 2 minutes, scrape down, then blend another minute:
- 450g rice/almond milk
- 1 teaspoon apple cider vinegar
- 2 Tablespoons olive oil (optional, for crispness)
- 1 teaspoon vanilla extract
- 450g raw brown rice (see variations below for other grain options)

The batter should swirl around a vortex in the bowl - if it doesn't, slowly add more rice milk until hole reappears. For waffles, the batter should be thinner than pancake batter. This is the secret of light waffles.

2. Leave to stand at room temperature overnight.

3. Add and reblend on highest speed for 1 minute:
- 1 large egg (optional)

4. Blend in quickly but thoroughly (assisted with rubber spatula if needed):
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt

5. Preheat waffle iron, and spray with non-stick spray. Bake waffles until crispy, and serve immediately with butter and/or pure maple syrup. Or cook as pancakes in greased frypan. Delicious!

Variations:

You can use all sorts of grains in this recipe, not just brown rice...

try a mixture of rice & rolled oats, or spelt & oats (1 cup rice/spelt, 1/2 cup oats),

or buckwheat (hulled) and/or spelt.

Any of these grains will work: spelt, oats, brown rice, kamut, millet, buckwheat (hulled), barley (hulled), corn (whole dry, not cornmeal), quinoa... corn takes more grinding and definitely needs to be left overnight to soak.

You can also add 1 tablespoon flax seed if you like.

And of course, if you want you can stir in some chopped pecans/walnuts/sunflower seeds/berries/banana pieces!

Great work Jo - look really good.  Have you tried with straight buckwheat?  Maybe too heavy.

JulieO - there is a recipe for rice milk in veg book and ??EDC - but there is a thread on here started by Spanner?  about rice milk - worht reading just for the humour

These look lower in fat than the recipes in the recipe book that came with my waffle maker.  Guess I can use ordinary skim milk and still get the same effect?

i've been wanting to try these but coulnd't remember where the recipe was! what is hulled buckwheat jo? can i buy it hulled or do i need to do something with it? or is most of the buckwheat you buy hulled? how acn i tell?

Thanks for the link Thermomixer, I should have tried looking on here first.   :-))  I think it  may be easier to just use skim milk like Judy said.  These have gone on my list of 'to try'.  ;D

Of course you could use cow's milk instead, but if it's full cream, just add a little more so it's not too thick.  (Thick is okay for pancakes, but makes waffles a bit too heavy!)

I've used just buckwheat, it works fine!  I use hulled, I don't like all the black bits in it!

 I get pulled in different directions LOL and every time I come on here there's another recipe I want to make  :D

Just  made brioche for the  first time in my life, haven't even tasted it before so even though I don't have anything to compare it to, it tastes dam good!  Used the recipe from the EDC.
 
Going off topic here, sorry.  Anyway, I'm loving it.  ;D

Have already saved your bread & butter pud recipe Thermomixer, will  be giving that a try. 

A friend has suggested making a sweeter version of the dough and using it for cinnamon scrolls.  I love cinnamon scrolls, so want to give that a go too.  :-))

Brioche is very yummy Julie and so easy to make.  I love the brioche recipe from Jo's Quirky Cooking Blog (and the photo that Jo took of her brioche - yummo!).  I made one yesterday with stewed apples, sultanas, rapadura and cinnamon.  My kids love it!  :)

Thank you sooooo much!  Can't wait to give this a go.  You reckon just leave out the egg and not use a replacer?  May try adding a mashed banana instead of egg...

It really does work fine without the egg - in the original recipe it said the egg is optional.  I have a friend whose daughter is gluten, dairy and egg free, and she tried it without the egg and said it was great!  If you add banana it may stick to the pan a bit, unless you use a non-stick pan maybe.

I love the way you use your TMX to mill grains in your cooking Jo.  I have had many conversations with my TMX buddies here in Tassie about this and we all struggle to mill finely enough for most recipes.  Would you be able to post a list one day (when you are finished moving perhaps  :)) of some of the things that you make using whole grains?  :)

Okay, will try to do that soon.  I think the secret to finely milled flour is keep your blades sharp by grinding ice, making sorbet, etc a couple of times a week.  Also, with the blender batter method, you can use all wholegrains and it grinds up heaps at a time because it's grinding with the liquids.  Then if you soak the batter overnight, and regrind in the morning it's even smoother.  Here's another blender-batter baking recipe...

Just wondering if anyone can give me some advice.  I am really (REALLY) wanting to get a batch of these started tonight in preparation for tomorrow's breakfast but don't have any cider vinegar.  Is there anything that I could substitute?  I'm thinking that the vinegar is there for soaking purposes and that lemon juice may work in the same way?  Any ideas??  ??? ???  ???

It is only a very small amount Chelsea so shouldn't make a lot of difference if you use white vinegar or lemon juice - it would if it was a cupful though and there are various suggestions on google about substitutions for larger quantities. I'd go with the lemon juice myself.

Yes, white vinegar or lemon juice is fine - it's just to kind of curdle the milk so it's like buttermilk.  (The orignal recipe had buttermilk - I always substitute buttermilk with rice-almond milk + vinegar - 1 cup:1tsp.)

I use and electric one, find it bit of a pain to clean - usually make everyone else clean it lol with the excuse that I cooked!!  :D

I use a non-stick electric one, so I don't really have to clean it much at all.  I just brush with a little oil while it's warming up.

I made this blender batter cake today, but I don't think it turned out quite right.  My raspberries ended up on the bottom of the cake and the topping went all through it (not good considering it is a crunchy topping).  Jo's cake looks so beautiful in the photo on her blog so I'm wondering where I went wrong.  I did deviate from the recipe a little - I used cow's milk instead of almond milk, raspberries instead of mixed berries and a medium sized square cake tin instead of a large rectangular baking dish.

My mixture was firm when I put the berries and topping on so i don't think the cows milk or mixture was the problem.  Is a baking dish a cake tin or a glass/ceramic type dish??  Perhaps I used the wrong type of dish or need to buy a bigger size tin.  I would love to perfect this one.  Any suggestions???  ???

Hmmmm.... the only thing I can think of is the size of the tin - mine a large glass pyrex dish, 3 qt/2.8 lt.  But I don't think it would matter if it's metal or glass.  Was the mixture not too thin?  I just sprinkle the berries (or apple or whatever fruit I have) over the top, then sprinkle over the topping, and I've never had the topping sink in too much, although the fruit sometimes does.  Maybe try a different grain - you can use the same amount of spelt / wheat grain... although no good if you want gluten free.  Sorry, I'm stumped!  :(

I thought the size of the dish might have made a difference too Jo.  I will try my pyrex dish next time.

P.S - Is still being eaten - just a little crunchy in places.  ;)

I've just finished making this and it's in the oven! My batter was nice and thick this morning, then when I added the last bits and blended it, it was a lot thinner - also had heated to 37! My berries sunk into the batter a bit, but the topping didn't, so fingers crossed!

I have been waiting to see how MJ's topping went.  Hopefully it didn't sink like mine.  I may have to give it another try as I love the idea of making cakes from brown rice.  :)

Iv'e got an electric non stick waffle iron.   (Sunbeam I think)  It's terrific.  Wasn't very expensive.   Aldi have them sometimes,  but they don't get hot enough.   Will definitely have a go at this recipe.   Thanks Quirkycooking.

Made buckwheat pikelets today.  Beautiful batter, nice and thick and fluffy.  I had a small taste of the batter, and it tasted a little funny, so added 2 tablespoons of maple syrup to neutralise the taste.  We've never had buckwheat before, so maybe that's what it tastes like plain.  My girls normally eat their pikelets plain, no jam or honey etc so these were delicious with the small sweet addition.

The waffle maker arrived this week but being sick means it hasn't had a look in. Might see how I am feeling on Sunday and have a go with this recipe then.
