Title: 100% rye bread! is it possible?
Post by: Southafricanmommy on October 23, 2015, 06:38:50 pm
Hi there, I am a new TM user and want to make rye bread as simple as possible, with the TM, from grain.
Is this possible? Does it only work with using sourdough? Thank you!

Welcome to the forum Southafricanmommy.
Many forum members have had success using this New York Rye Bread recipe (http://www.forumthermomix.com/index.php?topic=5645.0) posted by Farfallina.

From memory 100% rye bread isn't the best. I think you need to add other flour to make it a little lighter. I'm not sure though. The recipe link CC has given you makes lovely Rye Bread.

In Australia I use Laucke Rye mix. I am pretty sure if has white flour in it.
I think %100 Rye would be very dense and require a long time to rise.

A 100% rye is possible but as Chookie said it will be very dense and take a long time to rise. Making it from grain by milling the grain in the TM will make it very dense and course. Grain milled in the TM is never as fine as flour.
