The garden is overflowing with salad veggies. The Rocket is slightly bitter and spicy , the Mustard is peppery and there are oodles of other soft leaves. This slightly sweet dressing complements these veggies beautifully
This is gluten free, can be dairy free and has no added fat.
1 cup milk, any sort( cow, rice, soy )
1 cup unsalted Casher Nuts
1/2 cup Balsamic vinegar
1/2 cup Raisins,
Place all in TMX bowl and mix, Speed 10, 4 minutes.
Keep in sealed jar in fridge for 3 days.
Notes
Don't be too generous with the Raisins as they provide the sweetness.
Can make 1/2 mix

Thanks for this Chookie, I love having some salad dressings all ready made up in the fridge and love this uses the raisins for sweetness as I'm trying to cut out refined sugars wherever possible

Sounds interesting Chookie, how would it go on potato salad and coleslaw?

Judy, I would reduce the raisins for potato salad and coleslaw. The only disadvantage of this lovely dressing is the colour. The Balsamic and raisins make it a pale brown.
I served it with tinned salmon ,on top of salad. This looked ok, but with a white base such as potato, not a good look.
Today I will add it to a 4 bean salad.

Good idea. Raisins also add colour. Perhaps could add dried pears.

I guess you could always sprinkle the raisins over the top of the salad. ( then DH could pick them off ;D)
