I originally made this recipe to enter in a local country show in the "Bread White Savoury" category. I had trouble finding a recipe for savoury pumpkin bread, so I came up with my own after a little experimentation. It obviously worked as I took out the purple ribbon!
I used leftover butternut pumpkin that I had roasted and frozen, but I have also made it with Queensland Blue.
Ingredients:
20g fresh yeast or 2 teaspoons dry yeast
175ml water
250g cold, cooked pumpkin
50g pumpkin seeds (pepitas)
1 tspn sugar
1 tspn salt
525g bakers flour
Method:
1. Place yeast, water and pumpkin into the bowl and mix on speed 5 for 5 seconds.
2. Select a temperature of 37C, and cook on speed 1 for 1-2 minutes until the display stops flashing and it reaches 37C.
3. Add the dry ingredients and knead for a total of 4 minutes.
4. Leave to prove in a warm spot until the dough has doubled in size.
5. Turn out onto a floured board. Pinch off a walnut sized piece of dough and form into a small ball and set aside. Lightly knead the remaining dough and form into a large ball. Place on a floured tray and top with the small ball. Cover and leave to prove whilst you preheat the oven to 200C.
6. Slash the loaf from top to bottom to create the ridges of the pumpkin, and cook in the oven for 30 minutes or until cooked.

congratulations ES, it certainly looks like a beautiful loaf. My brother had about 5 pumpkin plants and got over 100 pumpkins from it. He gave me a couple of butternut pumpkins which are really heavy and huge and I've made a couple of soups, and this recipe is great timing as I still have heaps. Well done on winning another show ribbon - you are fantastic how you enter your cooking and I speak for the forum here when I say we are very proud of your prize wins :-*

Congratulations ES, as said, we are very proud of you. Perfect timing here, DH came home with a heap of pumpkins a couple of days ago. I am just in the mood to make some bread. It looks fantastic.

this recipe just needs to be edited on step 2 where it says program to Sp 37 ;)
I've just made this and mine is not the lovely colour that ES loaf is, slightly more dark brown, but I'm just dying to slice it and have some for lunch. The dough was a beautiful mixture that kneads well when put on the floured mat. I'm going to boil up an egg and have it with some shredded lettuce for lunch, and then I will take a pic for here

I've had a few pumpkin plants pop up from my compost and I've started harvesting them, so I'm looking for recipes too.

Mine was lovely. I roasted 300g of pumpkin to make it, but it weighed less than the 250g when I was using it, so I think mine may have been a little on the dry side. It was a tiny bit heavy. however the taste was excellent. Clever lady ES.

The night before I just zapped the pumpkin cubes in the MW for 5 mins with a dash of water, and cooled in the fridge overnight.

I put the leftovers in the freezer, already sliced. We took some out tonight to have with our soup and it was lovely. So it freezes well.
