I read an article recently about preventing bananas getting ripe before you want them to. I end up with too many in the freezer. When your banana is ripe wrap it in newspaper and put in the fridge. I tested it out this week, wrapping them individually and they have kept firm all week; DH has one every morning with breakfast and now I only have to buy them once a week. It really works.

I was always told that bananas will go brown if you put them in the fridge. I'll try your trick! Thanks Troupie

Am definitely trying this! Both my husband and children dislike bananas even remotely too ripe so we have been trialling different methods over the last few weeks. Our banana tree has just grown the biggest hand of bananas I've ever seen so I may need to practise prior to them ripening.

Troupie, what a great tip, will definitely try it.
At the opposite end of the spectrum, if you are trying to ripen green bananas place them in a brown paper bag for a day or 2 if they are really green.

I store bananas in the fridge, the skins go brown but they keep ok inside I'll try the paper wrapping as I like to put a bit of skin in my smoothy too , more goodness in the skin than the inside flesh so I'm told

Yes, it really works and I still have 2 in the fridge after a week; thanks for the ripening tip Katj, sometimes that is all you can get and they are a bit woody when too green.

I too am off to the kitchen to wrap my bananas - thank you for the tip. There is only so much banana bread you can make and I certainly don't need any more in my freezer. Having said that though - a banana smoothie sounds good right now but could take one out of the freezer and keep the new ones fresh.

That's why I tried it Deniser; I have a fridge full of frozen bananas and the family don't like banana cake; works for me.
