Macadamia Fruity Snack Bars
Ingredients
45g sultanas
45g dried apricots
90g dried apples or pears
90g dried figs
50g macadamias
50g sunflower seeds
60g wholemeal flour
60g porridge oats
60ml orange or apple juice
3 tablespoons honey ( I used maple syrup)
Preparation
Preheat oven to 1900C
Line a 7 inch x 11 inch tin with paper. (18cm x 28cm)
Place dried fruit into bowl. Turn speed to 8/9 and turn back again to zero. You may need to do this twice, depending on how chunky you want the fruit.
Add macadamias, seeds, oats and flour. Add juice and honey and mix using :: until it is all combined.
Press the mixture into the prepared tin and baked until golden, about 20 minutes.
Cut when cool.

This tastes much nicer than mine looks!
This slice is from the macadamia website. You could leave the nuts out to make it nut free, you can also lower the GI by using more juice and less honey.
Next time I make it I will reduce the honey to 2 tablespoons.

I might give these a go tomorrow, just got back from my DDIL and she gave me a bag of Macadamia's they have to be shelled first and then roasted.

Oh dear, can't imagine what went wrong, but when I made these, I used the almost exact ingredients, but had to put them in a smaller tin - measuring about 7" x 7" and the mixture barely covered that ,. I was hard pressed to spread it over that much smaller area. I have checked and rechecked the recipe, but I had all the ingredients in.The resulting biscuits are nothing like the lovely picture - the biscuit is barely a quarter of an inch thick and is very chewy! Any suggestions please? I thought I had followed the recipe exactly, but it would never have spread across a 7" x 11" tin.

That's a nuisance. The only thing I can think of is that you chopped the fruit smaller than I did. I put it all in the bowl. Turned the dial up and then straight back again. The fruit was still quite chunky.
What did it taste like?

It was Ok, taste wise, but way too thin, very biscuit-like. If I make it again, I'll double the recipe and get some depth into it. Yours looked so beautiful and golden!
