Title: Piroshki
Post by: droverjess on November 29, 2014, 07:29:39 pm
Made these tonight, piroshki. They are like pastry pasties made with yeast and very delicious. Easy to do.

I filled them with leftover roast chicken, and gently sweated onions, garlic, mushroom, and red pepper with sprinkled fajita mix and a couple of spoonfuls of leftover gravy. DH's had extra red chilli in, with poppy seeds on the top marking his.

The dough is much easier to work with than pastry to roll out and crimp.

Here is the recipe for the dough:
http://www.globalgourmet.com/food/cookbook/2009/bread-matters/pirozhki.html#axzz3KTSvNGWt

I used a mix of spelt and 00 flour in place of the wholemeal as I had none. I used ordinary plain flour too.

I used  *: to rub the fat in, then added most of the egg, the yeast and water, and then mixed on  ::. I had to add quite a bit more water then kneaded 2 mins.

Then proceed as per recipe rising an hour, then rolling out, filling and proof again.

They were yummy, and cheap. One medium chicken this week has fed us for three meals with four more Piroshki each in the freezer and there will be soup tomorrow. .

Try them

Thanks DJ, these look great. I am always on the lookout for recipes for left over chicken. We are like you, one chicken seems to go a long way  :)

Our plans for dinner tonight fell through so I have grabbed some mince from the freezer and made a sort of savoury mince. I now have the dough rising to make these. I have only made a half batch of the dough to see how it goes. So far so good.

These were lovely. I loved the bread, so easy to make and you could put anything in them. A great way to use up leftovers. Thanks so much DJ. It's sort of a cross between pastry and bread.
I made a half quantity of the dough.
