Roast Vegetasbles, Haloumi and Quinoa:
Number of People 4:
Ingredients:
2 beetroot
1 cup kumara
1 red onion
1 red capsicum
1 zucchini
asparagus spears
1 cup cooked quinoa or freekah do this in the thermomix
2 tablespoons apple cider vinegar
2 teaspoons EVOO
Preparation:
Chop and prepare vegetables, roast in oven or AF.
In a hot frying pan cook haloumi about 1 minute each side
In the serving bowl, combine quinoa, vegetables vinegar and EVOO.
Serve topped with haloumi

Tips/Hints:
Both quinoa and freekah are nice with this dish. You can add any roast vegetables you have, even left over ones.
I have called it a thermomix recipe as you cook the freekah or quinoa in the thermomix.
