Title: Carrot, nut and dried fruit balls
Post by: achookwoman on October 06, 2014, 04:40:03 am
Wow,  these were posted in today's Age Newspaper,  recipe by Nicole Avery. .  I have adapted them to the TMX and changed the ingredients to suit our taste and to what I had available.  made 30 , 4 cm balls.

Ingredients
 3/4 cup chopped carrot
2 cups almonds
2 cups dates, cut in half to see that there were no stones.
3/4 flaked coconut
3/4 cup if dried fruit,  I used a mix of Apple, Apricot and pear.  The original recipe calls for dried Pineapple.
1 dessertspoon of Cinnamon powder. ( original recipe used double this amount )
1/2 cup of desiccated coconut extra to roll balls.

Method
Place carrot into TMX bowl and cut 2 seconds/ speed 5.
Place remaining ingredients into TMX bowl, except extra coconut, and Turbo for 4 seconds 3 times.
Continue to mix on speed 7 until the mixture easily clumps when pressed in your hand.  Keep mixing and testing.  Don't mix until you have a paste.   There should be some texture.

I used a 4 cm Ice cream scoop to form balls, then roll into coconut.
Place in container in fridge to firm up.
Can be frozen.

I will try making some nut free as these would be perfect in school lunch boxes

I like the sound of these Chookie. Are the dates fresh or dried?

Dried.  I have packed some to take with us tomorrow.  We are going to a field day.  I am sick of paying $4 for a very average biscuit.
I think you would like these DD.

Thanks Chookie.
I'm taking part in a study - starting tomorrow. Going to be vegan for 2 months. I've had my blood test and will have another one after a month and then in a month again.
A bit apprehensive. Vegetarian is easy, vegan that bit harder.
Will let you all know how I go.

Good luck Michele.  Will be interested to hear how you go.  There is a Blog called Vegan Dad.  I think.  Might be worth looking at.

I hope they've given you the guidelines and recipes Michele or do you have to explore the options yourself?

Michelle, we are practically vegan now (I can't remember the last time I cooked with dairy, but I do use eggs sometimes), so if you want ideas or help, let me know and I'll try my best to help you.  I think you already have at least one of the Revive cafe cookbooks, don't you.  They are really helpful.  Good luck.

Are any of the Revive Cookbooks better than others?
I would be grateful of advice.

I really like the Revive cookbooks, recipes are easy to follow and I have had success with every one I have tried (so far).  I've adapted a few to TMX (I think they may be in the vegetarian / vegan thread).  I perfer books 1 and 2, but haven't had much of a chance to experiment with book 3 so I shouldn't condemn it outright!  Perhaps buy one of them and see how you go.  The NZD / AUD exchange rate is fairly good just now so not too much of an outlay.

Good luck Mich. Tell us the story as you go. I've participated in a couple of studies over the last couple of years and have learnt a lot. I am now involved in a very simple one that goes on for at least 5 years. It's a Vitamin D study. I take a tablet on the 1 st of the month which could be vit D or a placebo. Then I may be called for blood tests at any time. Pretty easy really. No yummy beetroot juice to drink.

I was lucky enough to try some of these when Chookie and Ral popped in to see me earlier in the week.  They are delicious (the balls, I mean are delicious, as opposed to Chookie and Ral who are fabulous) ... I have to admit, they didn't last long.  I'll be buying some dried fruit at the market this weekend and making some of my own!

Just made these to take with me to a friends house, i didn't have enough dried dates so use some not so fresh that I had hiding in the back of the fridge, lol
Another great recipe chookie, the small piece I had was very nice. Very quick to make thanks.

Marina,  glad you liked them.
Jen,  I think you could probably add prunes or increase the amount of dried fruit.

Just made these. They are very good. I might have been a bit heavy handed with the cinnamon.

DD the original recipe had double the amount that I put in.   Thought it was a bit much.  A lot depends on the quality of the cinnamon.  I grind my own and it tends to be strong. The commercial stuff has fillers.

I just made these with cranberries, figs and apricots.  The cinnamon I used was a bit old so couldn't really taste the 1 dsp I put in, but the balls were delicious in the end.  Tahini biscuits next ...

Marina,  sounds like a nice mix of dried fruit.
When you make the Tahini biscuits, the firmer soft ones are the original recipe.  The ones I gave you had the extra Golden syrup and extra Tahini paste.  The second ones are more Anzac like.
I am making a Green Salad for lunch from the Revive book.  Was very hard to decide which one I would make as all looked delicious.
