Title: Gum paste

Has anyone made a gum paste using Tylose powder in their Thermie? I have watched a tutorial on YouTube and he uses a KitchenAid with a paddle attachment. I was thinking I could use the Thermie with the butterfly.

I thought the same thing cookie but I googled it and it's for cake decoration.  Not a lot of us that do too many fancy things on cakes, maddy or maybe ES would be the first to come to mind.

Hi Sami, I used to teach cake decorating and I am thinking that the recipe you have been looking at is one of Nic Lodge's.  I have had a look at the recipe and yes I think I could make it in the TM but you might still have to do the last bit of kneading by hand if you aren't happy with the texture of the paste.  I have only used gun tragacanth to make gum paste but  in this recipe Tylose is used as the thickening ingredient which I think makes the paste hold up better in humid conditions and it also makes a whiter paste.
I would use the butterfly to beat the egg whites and then also to add the Tylose.  When you felt that things were getting to stiff then take out the butterfly and knead until you felt it was a good consistency.  The first batch will be a trial & error one I am afraid but will be worth it!!  Good Luck!
