Title: Alkalised and non-alkalised cocoa powder

Does anyone know what the difference is between alkalised and non-alkalised cocoa powder is?  Are they inter-changeable?

Marina, sorry can't help.  I just buy Dutch Cocoa powder as it has a better flavour.

Me neither.  I rarely use any cocoa powder.
