I just got my thermomix a few months ago and am loving every minute. I haven't cooked a meal without it yet :D.
One of the first things I did was convert our beloved Oatmeal Pancake recipe to the thermomix. This is a very filling pancake, that has a "porridge" texture so it is not light and fluffly like your standard pancake. I used Organic Road raw honey or raw unpasteurised honey n this one and it is really important to get that lovely almost vanilla taste (I literally despise most generic honeys, so call me a honey snob :D)..If you can't get that honey, I would add a bit of vanilla bean paste to taste or find another raw organic brand.
65 g Oats
23 g Butter
23 g Extra Virgin Coconut Oil
65 g Oats (for oatmeal)
150 g water
110 g Spelt flour (any flour will do)
2 Tbsp Rapadura Sugar (if you don't have try light brown sugar)
2 tsp backing powder
3/4 tsp Himalayan Salt
330 g Whole Milk or coconut milk/cream or split between half cream/half hilo.
1 Tbsp yummy organic raw honey (I recommend organic road brand).
1 Large egg (You CAN leave this out)
Directions:
1. Mill 65 g oats for 5 sec/speed 9. Set aside.
2. Put water, butter, coconut oil, 65 g of oats in mixer. Cook 7 min/90deg/reverse or till cooked.
3. Put in the rest of the ingredients 20 sec/reverse/speed 5.
If it is too runny, just add a bit more flour until right consistency. I make this on a non stick frying pan. No need to add extra oil. You may need to if you make them on a regular pan though.
