I would like to make vanilla slice but can't use store bought pastry. I have found a non-thermie recipe I like the look of but was hoping someone knows of a converted recipe I can use.

There is a very successful Vanilla Slice recipe here (http://www.forumthermomix.com/index.php?topic=8292.0) but it uses Puff Pastry.
There is a recipe for GF Shortcrust pastry here (http://www.forumthermomix.com/index.php?topic=3809.0) but I don't know how it would work with Vanilla Slice. :-\

Cookie1 that would be great. My conversions are a bit rustic (chuck it in and see what happens!)
I would like a puff pastry Bootobethin.
I have googled a thermie recipe for rough puff and was going to try the ingredients for the filling following the edc creme patissier method. However any advice from experienced recipe converters would be much appreciated.
I can't remember whether the edc creme patissier sets thick enough for vanilla slice.

Susieja, just quickly I would put the flour and salt into the bowl. Add 2/3 of the butter and use speed 4 to mix, until it is like breadcrumbs. Then add the other 1/3 of the butter and use speed 2 for 2-3 seconds just to break it up a bit. Add most of the water and use :: until the dough comes together. If necessary add the rest of the water. Wrap the pastry and chill. I would then take the pastry out and do the rolling. If the pastry becomes 'melty'return it to the fridge to firm up.
