About the eggless custard - I've done it at two demos so far.  I make a dairy free, eggless custard, by grinding the rice (80g) then almonds or hazelnuts (50g), then add 500g water, 40g cocoa (or 1 tsp vanilla if you want vanilla), 100g Rapadura or raw sugar or 70g honey, and a blob of coconut oil (opt.), then cook as usual.  Then pulverise again on speed 9 for 30 secs.  (I think those measurements are right - must write them down!) If you want a dairy custard, just add more flour I think.

80g rice
50g almonds or hazelnuts
500g water
40g cocoa or 1 tsp vanilla
100g Rapadura or raw sugar or 70g honey
blob of coconut oil (opt)
Corn Flour (opt)

Grind rice on speed 8 for one minute, add nuts and grind again for 20 seconds.  Then add the rest of the ingredients and cook for 6-7 minutes at 90C on speed 4. At the end pulverise again for 30 seconds on speed 9.

I realized 40g cocoa was too much for most people - if you use a good quality cocoa, 20g is enough.  I also often use 600g water - it's quite thick otherwise - and no cornflour.

So it's:
80g brown rice (grind 1 min sp 9)

Then add the rest & cook 7 mins, 90 degrees, sp 4:
600g water
100g Rapadura or 60g honey or 80g raw sugar
1 tsp vanilla essence
1 tblspn coconut oil (opt)

Then pulverise for 20 - 30 secs sp 9.

i had someone ask me if it was possibe to make this without the nuts. i'm thinking not, but if anyone has an egg, dairy, gluten AND nut free version please let me know :D

I think you could make an arrowroot or cornflour custard with cocoa - thank goodness I have no allergies/intolerances.

I did make one at a demo that was dairy, nut and egg free and naturally sweetened - used the regular recipe, but I used egg replacer instead of eggs, extra cornflour (it was a bit thin), and regular rice milk (no almonds) and honey/Rapadura. I wouldn't usually use egg replacer, but this family did so I used theirs.  I have made custard without eggs or replacer - it's just a bit thin, almost a sauce.  Okay on cake, though.

We used to get rice flour or arrowroot "custard" when we were children if we had an "upset" tummy - it certainly did get thick if mum put in too much arrowroot or rice flour - so you may need to experiment brazen - and may need some extra honey or vanilla to give more flavour?

That's true - the problem with arrowroot is it goes very 'gluey' if you use too much, and some people don't like the flavour.

We used to get rice flour or arrowroot "custard" when we were children if we had an "upset" tummy - it certainly did get thick if mum put in too much arrowroot or rice flour - so you may need to experiment brazen - and may need some extra honey or vanilla to give more flavour?

Yes we used to get "Cornflour Porridge"...what were they trying to do to us....glue or orifices shut!  ??? ???

 ;D ;D ;D ;D ;D Sounds like concentration camp type food - must say Mum never tried to feed me with stuff like that.  She always made me a cooked breakfast.

I think faffa's "porridge" was not for breakfast - but like mine - instead of anti-diarrhoea mix !!!

Don't know about porridge, but when we were sick with "D" mum used to say that rice was "binding".... ;)

LOL - yes, it worked when combined with leeches for blood letting and a soothing draft and lots of chanting !!!  ;)

I think that it was just to give the gut a rest and it felt like it was going to bind you up as you swallowed it!!
