Name of Recipe: Lentil 'Sausage' Rolls from Australian Healthy Food Guide June 2014. This is my take on the recipe with minor changes.
Number of People: Makes 12 good sized rolls
Ingredients:
1 slice frozen bread broken into pieces (wholemeal or white)
400g can brown lentils, drained and rinsed
1 large carrot, cut into chunks
1 egg
35g walnuts, roughly hand chopped or 2 quick pulses in the TMX. You will need to hand chop any large pieces remaining.
1/4 cup hand chopped chives
2 tbspns BBQ sauce
2 tbspns Tomato sauce plus extra to serve
3 sheets puff pastry cut into 4 pieces
Olive oil spray
2 tsp sesame seeds
Preparation:
Preheat oven to 200oC and line a baking tray.
Make crumbs from the slice of bread, 2 sec/speed 6.
Place the crumbs into a large bowl.
Chop the walnuts if using the TM method with 2 quick pulses. Add to the crumbs.
Chop the carrot 3 sec/speed 5 - check to see if it's fine enough then add to the crumbs.
Add the egg to the TM bowl and mix 3 sec/speed 6.
Add to the bowl along with the lentils, chives and sauces.
Either mix by hand or return to the TM bowl and mix for a few seconds on speed 3/reverse.
Place 2 heaped tablespoons of mixture onto the edge of each pastry piece, when you are happy with the quantity of mixture on each one, roll up firmly. Place seam side down onto the prepared tray, spray with olive oil and sprinkle with sesame seeds.
Bake 18 minutes, turn each roll over and bake a further 3 minutes. Remove to a wire rack to cool completely.
Tips/Hints:
Healthy choices are no-salt added lentils and sauces and brown bread.
I didn't add any salt to the mixture but probably would have if I'd used the no-salt options.
Filo pastry was used in the original recipe - 5 sheets in total to make 10 rolls, each one cut in half lengthways, sprayed with olive oil before adding the mixture and rolling up leaving .5cm at the sides and 5cm at the short end.

Good one Uni, did you mush up the beans a bit or leave them whole? How many fitted into the a/f at a time?
