Cookie, this sounds strange but was very nice. You eat it hot. Would go well with roasts or grills. Gave some to friends who ate it cold with cold lamb. They liked it.

Boo, think I would dice the carrot smaller, or even a couple of seconds in the TMX. The intense flavour would go well with corn chips.

In the pan reducing the liquid. Was tempted to add, Cumin, Coriander and fennel , but resisted.

No, or I would have add them.
I suppose it depends on what you are serving it with. I am serving it with Spicy Italian Pork sausages, mashed spuds and sautéed greens.
If serving with eggs or stirring through a tin of beans, then the added spices might add an extra kick.

Have just made 3 rd lot of this. Have made a puff pastry tart with this as a filling and topped with feta cheese, having a little as filling in omelet for lunch. ( 2 day today) . Visitors tomorrow, serve this reheated with roast beef.
