Ral said this was much better than it looked, and I thought it looked pretty good!
You need to start the recipe the day before baking it.
4 cups of rolled oats, cover with water and stir in 1/4 cup of yoghurt. Let sit overnight on kitchen bench.
Next morning, drain well and mix with remaining ingredients.
1 cup chopped walnuts
1 teaspoon cinnamon
Pinch salt
3 eggs
1/2 cup milk
1/2 cup of honey
Juice and rind of 1 orange
1 cup of fried figs or apricots
3/4 cup of dried cranberries.
Set oven at 375 o
Mix all together in TMX , on reverse, until well mixed.
Pour into 2 , lined or well oiled, baking dishes. 26. X 20 cm. the mixture should be about 5 cm deep.
Bake for 45 minutes , until browning around edges and set in the middle.
Cool on wire rack.
Notes
Use large flaked rolled oats, not quick cook ones.
Any nuts could be used but stick with the one type.
A variety of dried fruit can be used. Good for using up those odd bits.
I like to dot extra nuts on top
Can be eaten as a slice or for breakfast, topped with fruit and yoghurt.
It is not sweet.
Can be reheated in pan with a little butter or microwave.
This recipe is adapted from The Nourished kitchen, by Jennifer Mc Gruther.

Yes Cookie, I even thought to stir some. grated apple through the mixture, before baking.

Mine is quite soft. Is yours crisp Chookie? I had 2 pieces for afternoon tea, I truly love it. Probably fairly healthy but oh so delicious and not too sweet at all.
