how much does it make? 2 potatoes doesn't seem like much for the family! lol

No one seems to be coming in on this one Karen so I'll put my 2 bob's worth in. Haven't made it for ages but my notes say that I used 4 potatoes and only 500g water. Should feed 4 surely. It wasn't my favourite tasting potato & leek soup though.

i put in one extra so fingers crossed. i have never had potato & leek soup before (other than tinned) so not sure what it should taste like! (i'm going out for tea though so don't relaly care lol)

It isn't my fave either, I think I'll just use my own recipe in future. I just use potato, leek and chicken stock. No measurements lol.

the kids were having seconds as i was leaving. i tasted it and thought it was OK. not great but not awful, edible definitely. dh doesn't like leeks so didn't care what he thought :D (wasn't actually going to tell him there was a leek in it but he caught me with the leek >:( 8))

This is the first soup I made in the TMX. We all loved it! Was plenty for a family of 4 with leftovers for lunch the next day. Especially if you make some yummy fresh bread rolls with fresh herb and garlic butter. It only takes 15mins!! and no chopping this is definitely a takeaway replacement dinner in winter. :)

This was one of the first things i made with my TMX and I also thought that it was okay and definitely enough for 4. When we have soup, we have with fresh rolls and that all. There is no other courses.
However, I have since made, using my own recipe and I would suggest that you try using milk instead of water. This will make it more like the traditional Potato and Leek soup of old (or if you have enough Buttermilk stored from making butter - use the buttermilk, it will not be quite as creamier, but will still taste good).

Thanks for bumping this shazcat. I made it as per the recipe in the book and didn't really like the taste.
I think that the leeks need to be sweated for longer to make the soup taste better. It had an almost raw onion flavour that I didn't like. I then made it again with some stock added to the leeks and onion and sweated them at 90oC for 15 minutes before doing the rest and it tasted better.

Thanks for this information shazcat - I didn't like the ECB version at all. Should have compared it with my old recipe (got to start thinking outside the square :P :P) which was made with chicken stock and cream. Milk would be far less calories than the cream though so worth another go. I usually try a recipe, don't like it and move onto the next one - no second chances with me :-)) :-)) but I do like a GOOD potato & leek soup.

I can't beleive we are all talking about the same soup - it was such a hit at my house and I had visitors that loved it! Did you only use the white part of leek?? Too much green would make it taste revolting?? :-\

Yep - just the white, but I think that it may actually have been the onion itself, on reflection, that made it taste below par.
A chef last week said that he didn't like using leeks at all in stocks and soups because they made things smell off - I normally love them, but a little more cooking for me.

I agree, I think the onion and leek was too much, or maybe not cooked enough for me. Not sure whether I'd bother trying it again. Too many other soups which I know and love
