Title: Biscuit/cookie recommendations
Post by: monkeyboyzmum on March 14, 2014, 10:26:10 am
I hope this isn't in the wrong place - I could not see a separate biscuit baking section - I need some suggestions please for the best cookie/biscuit dough for shaped biscuits - I have a special new set of spring loaded themed cookie cutters and I need to give them a try.

So a dough that will hold the shape after it is cut and indents are pressed in is what I need. Help please? :-\

Flavour - not averse to gingerbread/shortbread - I thought at first nut flavours wouldn't work but I guess if they were ground in the TM it would be fine. Choc chip won't work but chocolate flavoured might. Open to ideas and I will post a picture of the results

Thanks in advance

Despite my best intentions, I haven't made any of these yet, but you could try Scottish Shortbread (http://www.forumthermomix.com/index.php?topic=7076.0;topicseen#top) or Christmassy St Nicholas Speculaas (I don't have a link, but the recipe is in Devil of a Cookbook, or I could PM you the recipe) or pfeffernusse (http://splendiferousthermomix.blogspot.co.uk/2011/11/pfeffernusse.html) - another Christmassy recipe.

Most biscuit recipes are in the cake section. Have a look through there and glance at the reviews. I'm sure you will find something suitable.

tried two doughs today - the shortbread is definitely too buttery to work - I am sure they will be delicious though.

The second one is this one - my own doh!) and that is definitely the type of dough so I might try to tweak it into a chocolate flavoured biscuit with the same proportions of egg/flour/butter http://cafedisarray.blogspot.com.au/2013/12/thermomix-gingerbread.html

In the meantime isn't this just the crankiest little biscuit you have ever seen?

It's fantastic. How did you do it? Did you use your cutters?

Yes my cutters were so much fun I blogged them.
K9 was a bit disappointing his tail broke off all but one but the others are great

Check them out at Cafe Disarray

Looking forward to making another flavour

I love your biscuit cutters. I think I'm going to search online for them as we are big Dr Who fans   The recipe I use for cut out biscuits is Lady Flo's basic biscuits. http://www.forumthermomix.com/index.php?topic=9286.0 (http://www.forumthermomix.com/index.php?topic=9286.0)It is my go/to recipe, and works well as an iced biscuit too. Here are some peppa pig biscuits I made for our fete using this recipe.

Thanks everyone. Peppa pig performed at our fete, so I  made these to sell as individual biscuits. I just made a cardboard template and cut around it, and them iced them with royal icing.

ES they look so lovely. Much better than ones you see in the shops selling for a large price.
