SC (1.5L) Five seed bread
One of the best breads I have made!
50gm wheat milled about 60secs/speed 9
Add:
250 g luke warm water
1 tsp yeast
½ tsp coarse celtic salt (like rock salt)
Then add other ingredients:
50g rye flour
150g unbleached bakers flour
25g oats
15g each sesame seeds, linseeds, sunflower seeds, pumpkin seeds, poppy seeds
15g honey
1 Tbsp apple cider vinegar
15g olive oil
Knead for 2 minutes.
Line SC with baking paper (makes it easy to lift the loaf out) and cook loaf on high for 1 hour and 15 min.
Lift loaf out, put some seeds in the bottom of the SC and put the bread back in top first to brown. Cook on high another 15 min.
I read somewhere that apple cider vinegar is a natural bread improver but I cant remember where. Also I use organic flours which are meant to be thirstier than normal flour. I dont know if that is true.

I have just put this on. I didn't have any oats, I thought I did but the good fairy used them in biscuits., so I left them out.

I think I might try this, but not in SC, just bake normally and soak the seeds first.
Will use spelt for unbleached.
Has anyone tried grinding seeds.
Try tomorrow if I can.

Will be interested to see how it turns out DJ. I often grind the linseeds but love the texture of all the other seeds. I have stopped buying spelt flour because it is so darn expensive.
I have tried this loaf in a normal oven and in the SC. IMHO the loaf done in the SC is way better that a loaf done in the oven. It is a better texture and rises a lot more.

I think my success was due to lining the SC bowl differently. I can't wait until it cools and I can cut it.

It has taken me 3 tries to get it perfect JulieO. It is cooked well this time. I love the taste. It is full of seeds. I normally don't eat seed bread as my teeth break very easily, however this has quite soft seed. Well worth trying. My only trouble is I keep 'trying' it. :-\ :-\

I decided that I would be a smart Alec and try this in a small loaf tin. It worked perfectly but was very light and airy. I much prefer the heavier bread that is made in the SC. a lesson well learned here.

That would have been lovely. I don't know if it's one of those things where I am looking at it and can't see it! Or, if it is hard to find.

I used to be able to buy it in Coles but I can't anymore. I bought my last lot from a health food shop and it was expensive. I often buy it at the Swansea Markets in Vic Park. I know that is of no use to you Bedlam but perhaps a market near you may have some. :D

Do I double the recipe? Has anyone tried? If so what about the timings?

DJ the fact that the SC is oval should be good as the depth of the bread will be about the same. I'd try a double recipe and cook for just a little more.
I'm sure others may have better ideas. Good luck.

I buy Rye flour from my local bulk produce shop (Bill's Scoops in Kardinya). I would think there are these sorts of shops in most cities
