GINGER CAKE
This recipe is converted from the Best Recipes web site and is my first conversion.
Ingredients:
170 g butter
120 g raw sugar
210 g golden syrup
340 g SR flour
1 dessertspoon ginger
1 dessertspoon cinnamon
2 teaspoons bicarb soda
2 eggs
225 mls milk
1 tablespoon vinegar
Method:
Place sugar in the TM bowl and mill 2 seconds on speed 10
Add butter and golden syrup and melt 2 minutes 60 deg speed 3
Add remaining ingredients and mix 30 seconds speed 5
Scrape down the sides of the bowl and mix a further 30 seconds speed 5 until the mixture is nice and smooth.
Pour into a greased ring tin and bake at 180 deg C for 35 mins
The cake can be iced with lemon icing or left plain.

Katiej- I made this cake today. After melting the butter and golden syrup for the 2 minutes, I scraped down the sides of the bowl and then gave it another 30 seconds as my butter wasn't completed melted (I did use really cold butter straight from the fridge though).
I made lemon icing as suggested and it really compliments the cake.
It's a lovely cake and reminds me of my childhood. Thanks for the recipe Mab!
