Name of Recipe: Carrot & Zucchini Stuffed Mushrooms
Number of People: Makes 2 mushrooms, just increase the ingredients to serve more.
Ingredients:
2 x 9cm diameter open mushrooms
30g tasty cheese
50g carrot cut into 4 cm chunks
80g zucchini cut into 4 cm chunks
1 tblspn crunchy peanut butter
2 tspns light soy sauce
Pepper to taste
Preparation:
Peel and remove the stem from the mushrooms, turn upside down and spray with olive oil. Set aside.
Grate the cheese 2 sec/speed 8 and set aside.
Without cleaning the bowl, add the carrot and chop 2 sec/speed 6. Set aside.
Add the zucchini and chop 1 sec/speed 5.
Return the carrot to the bowl, add the peanut butter, soy sauce & pepper.
Mix 15 sec/reverse/speed 2 or until combined.
Divide the filling between the 2 mushrooms and top with the grated cheese.
Preheat the airfryer (or your oven) to 200oC, place the mushrooms directly onto the wire mesh of the basket of the air fryer and cook 7 minutes. Turn the heat down to 180oC and continue cooking for a further 8 minutes.

I'm going to give this a go tonight and will incorporate them with the carrot / zucchini mix. Although they are not included in the original recipe, either, but I'll see what happens. I have another stuffed mushroom recipe that puts the stalks in with the stuffing mix so I should imagine all will be well.

This was very nice - I liked the peanut butter in it. So long as you don't go over the quantities of PB and cheese, this can easily fall into the 5:2 diet - I estimated c. 100 calories per mushroom.
The stalks didn't appear to make any difference at all - my only problem seemed to be that they were glued in with superglue, I had a bit of a job getting them out ... but I persevered and won! Definitely onto my 5:2 list. Thanks for converting the recipe, Judy (because I was doing this "by hand" I had to grate the carrots and zucchini, but I remembered how to use a grater so that worked out fine).

:D :D Hand grating is a skill we don't forget easily Marina. Glad you enjoyed them like I did. I also found the stem difficult to remove - I sort of sawed into it with a sharp, pointy knife, turning the mushroom as I did so.

I love mushrooms, will just do my version in the AF, ie whatever is in the fridge :)

I actually cooked mine in the microwave. Perhaps not the best alternative, but it was all I had to hand. Slower cooking in the oven / air fryer would probably be nicer.
