Made the marinade in TMX and roasted Zucchini in AF . Very simple and tasty.
Marinade..... Place in TMX bowl, 1 small egg, 1 tablespoon of olive oil, 1 tablespoon water. Salt. Zap for 10 seconds
Cut Zucchini into chips, 1 - 1.5 cm thick x 6 cm long. Soak in marinade, drain well and lay in single layer in container or silicon sheet in air fryer.
Roast until brown at 200oC. I think it took 10 mins. The chips were quite soft but tasty and another way to use Zucchini.

Having a pie for lunch today so I thought I'd try this recipe of Chookies. I cooked mine for 12 minutes and they went well with the pie, thanks Chookie. I had 2 egg yolks in the fridge and as these usually end up in the bin, I added an extra tablespoon of water to the soaking mixture and used them. Halfway through cooking, I sprayed some olive oil onto the batons.
I had some leftover batons of zucchini so decided to try something a little different once the first lot were cooked. I drained the zucchini through a sieve then tipped them into a bowl into which I had grated about 3 tblspns parmesan cheese. Tossed them to coat them evenly then laid them side by side in my metal dish and cooked them for 12 minutes, stirring 3 times. The parmesan cooked up nice and crisp and added that little bit of extra flavour to the zucchini.
First picture is the plain version, second picture is the parmesan version.

Probably should mention that I only did 1 medium size Zucchini. This also was the amount that fitted into the dish that I use in the AF. Also the salt I used was extra tasty, from Port Willunga, with Desert Lime and Rosemary. Given to me by a very good friend.

I will make this very, very soon as I was given two green and one yellow zucchini today.
