Title: Recipe review: Basic Shortbread Base KIS P28

I got this book for Christmas, so needed to make something immediately.
 I found that I had to mix this pastry a little longer in my ThermoChef in order for it to come together. I placed about a tablespoon of the pastry into silicon cupcake liners and pressed down with my fingers to cover the base and sides. As I made each one, I placed them in the freezer until I had filled all 12 cupcake liners. I cooked them in the oven for about 15 minutes. When they were cool, I took them out of the liners and then filled them with lemon curd and topped them with whipped cream and a bramble berry.
The pastry was crisp and delicious - just right for a fruit based tart. I got a lot of compliments for these little tarts, and will definitely make these again.

I love how you have done a thin case, I dislike thick cases as they overpower the filling. Looks very delicious and I wish I could have one. Is a brambleberry a blackberry or mulberry?

They are a cross between a raspberry and a Blackberry.  They are quite tart as berries go, but delicious all the same.

ES I'm looking for a base for lemon tarts for my finger food party. Would this be too fiddly for smaller tarts?

Kezza,

I don't think this would be too fiddly for smaller tarts. I'd give it a try as I really liked this pastry.

I did make these into smaller tarts and filled with lemon curd.  They were lovely - I cooked for 10 mins with some paper and weights as my first batch rose too much and not enough room for filling. Then took paper and weights off and cooked for another 2 minutes.  Perfect!  These were very popular at my party.
