Hi
I am after a nice vanilla icecream recipe. TMX is nearly here, so I'm not sure if there is one in the EDC or not, so if someone can point me in the right direction I'd appreciate it. DD1 has requested it as the first thing to make!

There is one in the EDC.. just make sure you have your milk frozen in ice cube trays beforehand! :)

The traditional recipe in the EDC is Fantastic! I use vanilla bean paste instead of vanilla essense to add a richer flavour or you could add a whole vanilla bean to the mix during the heating and then remove before blending. You do need to blend more than once and the recipe takes a lot longer to set than in the book. I blend mine about 3 -4 times but make sure you never let it fully set between blends! all up it takes between 24 to 48 hrs but it is worth it.
You can also add 200g of choc at the start of the cooking phase to get THE BEST creamy choc ice cream. Just remember to reduce the sugar.
I have also been told that using icing sugar rather than granulated sugar also helps to reduce the icyness and make it more creamy.
