Cheesecake Swirl Brownie Cake
Easy, even ds age 10 could make this. Mine cracked a bit on top, but I dont mind. :) Havent tried it yet, but both mixtures were great before cooking. I used baking paper as Tenina suggested but will try without next time as I never use baking paper.

Funny how you changed your forum name to Halex quiet a while ago but we all still call you Hally anyway. New forum members must get confused :)

Hi Tenina,
Not sure if you are checking this thread often - you mention in your recipe that this cake can be cooked in a combo-steam oven. What percentage steam and what temperature do you use? Would love to try this in out steam oven!
Thanks!
Karen

I made this last night, and I am sorry to say that it did not work for me at all :(
I used the right sized tin and amounts of ingredients as written. I cooked it for an extra 10 minutes because I thought it wasn't quite cooked in the middle.
The top of the cake looked fantastic, but when I cut it up this morning (after being in the fridge overnight), only the top 1/3 of the cake was cooked, and around the edges. The bottom 2/3 of the cake was almost completely uncooked. Really disappointed.
I don't know how to salvage it either. Don't want to waste all those ingredients, but not sure what to do with it. It is all cut up now, and if I put it back in the oven, the cooked bits will dry out.
Any suggestions ??? ???

Could you steam serves in ramekins to reheat/cook more and serve with custard as a pudding Karen?
Hopefully Tenina will have the answer for this one.
-
Karen, what a disappointment, I dont know where it went wrong. Mine was cooked perfectly.
I would be looking at turning it into a pudding & serving with chocolate sauce or vanilla ice cream.
-
Thanks Judy and Hally, puddings are a good idea.
The boys will be happy - these brownies were destined to be given to other people today. Now that they are a "failure", they stay at home ;)

I made this the day before Xmas to have when my family came over on Xmas Eve.
Unfortunately mine went a similar way to Karen's. I cooked it for 20 minutes longer than the recipe stated, but it was sticky and gooey inside (& not in a good way!). We ate it and it tasted lovely, but it wasn't cooked properly.
I'm not sure if Karen used her steam oven? I just cooked it in the tray of boiling water as per the recipe. I think it might have been better to just cook it normally in the oven without the water bath.

No Katie - I didn't use my steam oven - I just used the normal oven in a water bath as suggested.
To salvage the recipe, I put everything into a glass bowl (both cooked and uncooked bits), mushed it all together with a fork and steamed it, then served it with custard. It tasted fine, but the texture left a lot to be desired.

Katie, yours is very white compared to mine. I swirled through but it really stayed on the top. I wonder if that made a difference, mine was more cake mixture underneath. My oven is very hot & I always cook on ff.
Did you do the dry test before taking it out of the oven?
:)
-
Well at least with 2 failures out of 3, you know it isn't just you Katie & Karen.
You could be right Katie, just cook it as a normal brownie without the steam. Maybe Tenina will pop on and respond to this one, it is a puzzle.
-
I did a test Hally and it seemed cooked and after 20 minutes extra cooking time, I felt I had to take it out of the oven but I wasn't confident it was right.
I swirled the cheesecake on top all around the middle and sides, but it seems to have sunk into the middle - so I've got mainly brown outside bits and a white cheesecake middle. It wasn't wasted as we still ate it and it was nice.
-
Funny how 2 different people cook the same recipe & the look is very different. I am going to make it again soon.

Mine looked different again - I did what the recipe said and "scooped" the choc layer from the bottom up to the top, then swirled it around on the top to create a pattern. I still ended up with mostly chocolate on the bottom layer and a mix of the white a brown on the top layer. However, it was both the white and the brown that weren't cooked for me. I couldn't have cooked mine any longer, otherwise the top and the edges would have been overcooked and dried out. It made quite a thick brownie - I was thinking that a larger dish would have spread out the mixture more and made it not so thick, and cooked better.
I must say, I usually make Amanda's brownies from this forum, and have never had any problems, so I doubt that I will try this recipe again :(
-
I used a square brownie tin 23cmsx23cms.
What sizes did you guys use?
-
I used a 20 x 30 cm tin as the recipe said.
Although looking at Tenina's picture hers looks square and not rectangle though.
Did you put yours into the tray of water?
-
No i wasnt really sure which way to go.
In the water, water underneath or using the steam selection on my oven. I ended up using the water underneat on the floor of the oven.
-
I put mine into the water bath (like a bain marie). I think that's what Karen did and I think that was why ours didn't cook through!
I read the recipe literally - place cake tin into baking dish of water (which was on the bottom shelf of the oven as per the previous instructions).
If I made it again, I'd have it up higher in the oven and not in the tray of water. I might just make it again one day, as I'd like to make it properly :D
-
Katie is right - I put a baking dish of hot water on the bottom shelf of the oven, and placed the tin with the mixture into the hot water. That is how I read the recipe …….. Maybe the water was supposed to be on the bottom of the oven, and the cake mixture on the shelf above it??

Judy came over for coffee and a chat this afternoon and we had some of this.
It had firmed up well in the fridge and was actually a lot better today, nowhere near as sticky and gooey as it was on Xmas Eve.
-
Yes it was lovely, the cake part was light and it certainly had firmed up in 24 hours.

I cooked it differently to you both & mine worked out well.

Made this today. I found it very easy & method quite clear. Texture/cooking time reasonably spot on. Though taste not quite right for us (maybe b/c we also had Tenina's super yummy all purpose ice-cream with it, which certainly out shone the brownie). For me I could taste in the background the balsamic vinegar, DH couldn't taste vinegar - but did say it's not his favourite brownie.
