Title: Ice Cream

Hi All. Just wondering if someone could tell me how much glucose to use when making ice cream? Do I just use maybe 1 tblsp and only half the amount of sugar in the custard mix or what way would you go about it? Thanks Sandy

Sorry Sandy, not sure how much sugar is in your recipe, but I would start with about 1/3 or 1/4 glucose to replace the sugar.

Glucose is not quite as "sweet" as sucrose (sugar) so you may need to check for sweetness.
