Soo - I have only owned my thermie a week, and I have tried twice to make bread - both unsuccessful :-(
My first attempt was the sweet buns ( I dont think they were given enough rise time - they were extremely dense - family liked them - they gave me indigestion!)
Lastnights attempt was the basic bread mix in EDC but done with Buckwheat and converted (planned to anyway) to dinner rolls
I used grapeseed oil instead of olive oil too .
I turned the oven on high, then turned off, and placed dough in a bowl with teatowel on top. Left to rest for an hr.
Pulled it out, the outside was slightly crunchy - inside was a sticky mess :-( :-( I think teh oven was too warm and shouldve waited a few minutes before I popped it in to rise.
All I want is a yummy home made roll to have with dinner!!

Buckwheat needs a totally different process. Go to chookies bread help thread for new and different ways.

oh ok, thankyou - its just I seen the demo lady do it at my TMX demo lol it was delicious with Buckwheat!
Can I be really daft and ask what the 550 is at the end of the ingredient flour? -
500 grams flour, 550

It's just the type of flour used in Europe Melissa - we use bakers flour here.

Isi's bread and rolls were the first recipes I had success with and I agree with Gert, don't play with a recipe until you have had some success or you will lose your confidence completely.
Once Chookie joined the forum I then had success with her recipes too - this no fuss roll (http://www.forumthermomix.com/index.php?topic=4253.0) recipe is very good too.
Another favourite and one which is quite quick due to the method of rising is Cookie's Vienna Loaf (http://www.forumthermomix.com/index.php?topic=8950.0). I've used this method of rising for other recipes on a cold day and it worked for me.

Good luck and do let us know how you go. It is so satisfying when you have mastered it. The one thing with bread is that you can't hurry it. Just be patient and don't hang around waiting for it.

Fear not, Melissa, you are doing really well (compared to me). The first bread I ever made - pre TMX days - was so hard the birds couldn't even eat it! Now I make bread weekly and love it. Stay with the suggestions above, take your time for the first couple of times and you will be fine.

Melissa, we have all been where you have just been. Take advice from above. You will get there as there is lots of help available. Make plain white bread first so that you know what should happen. Never let your dough dry out on top. Buy one of those cheap spray bottles and keep in handy when making bread. Isi's recipe is a real winner.

Melissa I would also say that your oven was too hot when you put the dough in to prove. I only ever heat mine to the lowest setting and then turn it off and put the dough in it (just to be sure) Please don't give up. The bread I make today compared to when I first started is a world apart. Once you master it you know by the look and feel of the dough what needs to be done once you start playing with other recipes.

If you are lacking in patience and time make this one. Do it after dinner and pop it I to the oven in the morning or later.

The bread Gert has linked to is my favourite loaf, I have never yet had a fail with it (for which the abovementioned birds are most thankful).

Don't give up, you will get a good loaf if you follow the hints that have been given by the others.
My first loaf was terrible, we were staying in the mountains at the time and I threw some of it out. My DH watched as a possum grabbed some and raced up a tree, took one bite and threw it back down.
Don't give up, you will be making great bread soon

I agree don't give up. Try some of Chookies recipes or the Vienna loaf.
My first few attempts the bread was very dense and heavy.
After awhile you will just get it and there will be no stopping you.

I agree don't give up and start with the no fuss dough and you will be fine
like faffa said use the lowest setting and then turn it off. i preheat for about 7 min

Keep trying, after a while you just get it, and bread gets easier. :)

I've never mastered proving the dough in my oven with the exception of the vienna loaf but that only uses a bowl of hot water. I've always found the oven stays too warm and the bread dry's out on the top before rising.

I have only made bread a few times & have a long way to go but at least I'm putting the correct amount of yeast in now bad my rolls aren't rocks anymore 😄

I also love the one minute bread from superkitchenmachine's blog, there's a thread on here somewhere.... Leave it to prove overnight, foolproof!

bread making and I have a love hate relationship try the Cobb loaf or Vienna *touch wood* I haven't had any problems with those 2 good luck it really is quite frustrating so I know how you feel ;D
