Quick and easy cupcakes that feel heavy but are light and moist to eat. Mine cracked on top, but this happens regularly to me, so could be my oven. Didn't have any cream cheese for the frosting so served some plain (very nice) and some warmed with salted caramel sauce (who needs frosting ;)). Also used vanilla essence instead of pod. Great recipe will be making again.

I made these today and they are yummy.
I used 3 bananas instead of 4, as the bananas I had were quite big. I also used SR flour instead of plain flour (personal preference). I iced them with vanilla cream cheese icing (recipe from the same book). Delicious!

I was lucky enough to call in to Katie's for a cuppa this afternoon and these were a lovely surprise. They were so light and I loved them thanks Katie & Alyce.

Kimmy have you checked to see if your oven temp is right? Just buy a cheap temp from the supermarket. I would hazard a guess and say that it was too hot if all your cakes crack.

Thanks CP will do. Strangely it's only my muffins that crack, not big cakes.

I made these last week and didn't ice them but froze leftover ones for the kids lunches. They are a lovely texture and flavour and were well liked by the kids. I will make some more this week and I might even try the icing. .
