Title: Blueberry Ice Cream

Makes about 1 litre

Ingredients:

250g blueberries, fresh picked or frozen
150g sugar
1/8 teaspoon salt
225g milk
335g whipping cream


Preparation:

1.  To the TM jug add blueberries, sugar and salt 8 Minutes / 100o / Reverse / Speed Soft

2.  Then  2 Minutes / 70o / Reverse / Speed Soft. Allow to cool slightly.

3.  Add the milk and then puree the mixture 20 Seconds / Speed 9.

4.  Add the cream 15 Seconds / Speed 4.

5.  Strain puree through a sieve into another bowl. (Set aside the solids and freeze for smoothies)

6.  Cover and refrigerate overnight, and then churn in the ice cream maker according to manufacturers instructions. I have the Cuisonart compressor and it was 40 mins and then into the freezer for firming up.

yum cp wish our weather would warm up just can't eat ice cream when it's still so wintery

Well said Suzanne. We've had hail and strong winds today. Not very summery. Ice-cream looks great CP. Lovely colour.

You don't have to wait for summer, team a scoop of icecream with a warm fruit pie or a nice pudding

I like icecream with honey, or even warm custard.
