I am not an olive person but I decided to make these (I did reduce the olives to 60g) and they are really very tasty. I've had several already just to see if I really like them :-)) I wasn't sure how big to cut the shapes but I figured smallish would be best. Alyce describes these as 'a little sweet, a little salty, the perfect cracker' - not sure if the kids would like them but for adults, they are certainly worth the effort. Do as the recipe says and you will end up with very crisp little crackers. At the end of the cooking time they will not be that crisp in the middle but they do crisp up after their time in the turned off oven.
I enjoyed mine both plain and with cheese and beetroot relish.

I'm sure they will keep well in an air-tight tin Bonsai - mine will last a while because it is just me eating them so I can let you know how they keep over the next month or so (if they last that long). For a Christmas hamper gift I would also give the recipients something to compliment the cracker eg quince paste, onion jam or some nice cheese.

Try 1/2 quantity of olives for your first effort Trudy. They do become very addictive though.

I didn't have flax seeds, so just used that quantity in extra sunflower seeds.
I did use the full amount of 80g of olives, and honestly it didn't overtake the flavour.
They did turn out very crunchy, and Next time I'd like to not leave them in the oven, and see what they're like a little softer.
....very nice and will definitely make them again :)

Thanks for the hint about the crunchiness Maddy. My old teeth don't like things that are too crunchy. ;)

I made a batch today and DH and I thought they were a little salty, but we rarely add salt to cooking so have a lower tolerance than others. Otherwise tasty and will be part of gifts this week. I cut the crackers with a pizza wheel as a knife was tricky. I wonder if cutting them before baking would work?

Perhaps scoring them would work. Then you could just snap them after they were cooked.

I made these today as part of a gift for a friend's birthday tomorrow.I was worried they were a little soft after cooking but like Judy's they crisped up in the switched off oven.The crackers will be a perfect partner for the other part of the gift, which is a truckle of Cornish Blue Cheese.
