Title: Quick Fix Every Occasion - yoghurt cake p 203
Post by: Nikkit on September 11, 2013, 06:50:33 am
I made this today and will have to stay out of the kitchen so I don't keep sampling it.
Too yummy!
I did my version as follows (only because I am hopeless at following a recipe! and it depends on what ingredients I do or do not have in the pantry)

I put in 110g sugar as I always halve the sugar in any recipe
I used lime instead of lemon
I used tinned plums (didn't have any other fruit suitable)
And I forgot the sugar on top - would make it a bit crunchy I think.
I had to cook it for an extra 10 minutes, but that be my oven.
Probably should have pushed the plums in a bit more - but it still tastes good.

There's none left this morning and both girls and hubby said "you can make that one again".

It is a keeper!

Made this yesterday using 250g of strawberries which I soaked in a splash of brandy (DH needed cheering up 😉). I only used 110g of raw sugar and thought that was plenty. I found the mixture wasn't completely mixed when I went to pour it in to the tin so watch out for that. A really yummy cake.

With strawberries so cheap at the moment it would be a good substitute. Thanks for the suggestion. I now have to decide if I should use my strawberries for jam or this.  ??? ???

I made this again yesterday, although with a yummy twist. (Thank you Bonsai for the idea...  :-* )

I cut the strawbs in half and sploshed a bit of grand marnier over them and let them sit for about an hour before I made the cake.

Ohhhhh Yummmmmm  ;D

Thought about it later - should have added a bit of grand marnier to the cream I served the cake with, what a decadent dessert!

This cake is now a firm favourite in our house.  I used pears in mine and it is just so yummy.  I found I needed to cook mine for about 8-10 minutes longer for it to set in the middle.
