We had this for lunch and it was just lovely. I replaced chicken stock with meat concentrate and snow peas with just plain ol' peas. I also left the bones in the chicken. I used red chillis instead of green and kept the seeds. The spiciness was just perfect. I love the lemon juice because it makes the whole dish fresh. It's a very tasty dish that I will make often. Made this for dinner tonight with a few little changes - rind of a lemon as I didn't have a lime, no shrimp paste as I didn't have any, only 1 red chilli deseeded as my kids don't like hot food and served over rice. It was lovely and I will definitely make again - the flavours were great and the chicken was really tender. 5/5

I made this last night and we all loved it.
I served it with rice.
I like a thicker sauce, so next time I'll add less water or take the MC off while it is cooking to thicken it up a bit.
Will make this one again. :)

Wonderful recipe! So fresh authentic and delicious. I use a lime rind rather than kaffir lime rind and doubled the ginger to omit the galangal - will be a firm favourite in our house :)

Really delicious! I used lime rind instead of kaffir and didn't have any Thai basil or Galangal. Doubled the ginger to sub for the galangal. I also subbed coconut sugar for brown sugar as I have heaps of it.
The shrimp paste gives it that authentic smell LOL which my kids weren't too fond of but they loved the taste.
