Title: Spiced Fruit Bread

Spiced Fruit Bread
Makes one loaf
Ingredients
1 cup sultanas
½ cup cranberries
335ml bottle of cider
3½ cups bread flour
½ teaspoon cinnamon
½ teaspoon mixed spice
½ teaspoon allspice
1/4 teaspoon nutmeg
2 teaspoons yeast
Preparation
Place cider into bowl, 370, speed one. About 2 minutes. Remove.
Soak the sultanas and cranberries in the warmed cider. I left mine for several hours, but any time is ok.
Drain the fruit and set aside, place cider into bowl and add yeast. 370, speed 1 approx. 2 minutes.
Add the flour and spices. Knead 2 minutes, and then another 2 minutes.
Set aside in an oiled bowl until the dough doubles. This may take some time.
Turn out and knead the fruit in by hand. You can do this in the machine but it breaks the fruit up. If dough becomes too wet, add a little  flour.
Turn oven to 2100C.
Place  dough onto lined tray, shape, and cover, and leave to rise for 40-60 minutes.
When risen bake for 20-30 minutes, or until cooked.

This recipe is based on a recipe from the Australian Bake off competition. I have altered some of the ingredients to suit myself and also changed the preparation to thermomix friendly.

Cookie1 do you think half this recipe would work in the mini Slow Cooker?
What time would you cook it for in mini SC?

I see no reason why a half quantity wouldn't work. I haven't done any SC bread baking yet. Check to see how much flour are in some of the recipes and work from there.

I think this would be lovely in the mini SC but 1/2 would still be too much.

I think this would be right but would add a tiny bit more yeast than a third.  Let us know how you go.
