Lemon Sorbet
4 for dessert or 2 hungry people who skipped dinner and just ate sorbet ...
Ingredients:
Zest of one lemon.
210-220 g water
220-240g sugar.
1 cup of fresh lemon juice (takes about 9-10 lemons)
Preparation:
1. You could zest the lemon with a micro plane- but I just peel the lemon thinly with a sharp peeler. Then I throw in in the bowl and chop at speed 7 for 15 seconds. I scrape it down and repeat.
2. Scrape down the zest again and add the sugar. Chop for 20 seconds. I find this gets the zest really tiny.
3. Add water. Speed 3, 100 degrees for 5 minutes. Check if all the sugar is dissolved- if it isn't then cook for another 90 seconds.
Let this cool until its room temp. Once I forgot to make it so I put it in the fridge and forgot about it for 3 days. Still worked okay!
4. Add to ice-cream maker and proceed as per manufacturer’s instructions. I have a Sunbeam Gelateria. If I am lazy and let it get to luke warm it takes an hour- but when I did it straight out the fridge it took 35 minutes.
And that's it. 3 ingredients. And sorbet in under 90 mins. Awesome.

jeninwa - Made this today, we loved it. I only needed 3 lemons, the recipe didn't say when to add the lemon juice, so I waited till the syrup was cold and added it then. Will be making this again.

Made this today, we loved it. I only needed 3 lemons, the recipe didn't say when to add the lemon juice, so I waited till the syrup was cold and added it then. Will be making this again.

What if you don't have an ice cream maker?

I would freeze the mixture and then whizz in the TM.

Ha Ha - was just going to ask what to do if you don't have an ice cream maker and Jaylensmumma beat me to it. Sounds delicious will give it a go.
