Title: Risotto

I am making Risotto to serve in tiny cups at a High Tea for 50 people..How much do you think I would need to make and can I pre make it and how would I reheat it or how long would store in the thermo server and still be warm?

I'd take one of the tiny cups, fill in with water and then tip out the water into a measuring jug to see how much the cup holds. Times this by 50 and you will know how much risotto you need to make.  The Thermomix and the Thermoserver will hold about 2 litres of risotto (1 batch).

Personally I think risotto is best freshly made and doesn't reheat well. If time permits I would make it close to serving time and keep it warm in your Thermoserver. Others may have different ideas though.

Thank you. I normally leave it in Thermoserver for about 20 minutes to finish and then serve...do you think it would stay warm for 2 hours in the thermoserver

I would think it would be luke warm after 2 hours and I believe risotto is not successful when reheated.

If you rinsed the thermo server with very hot water it may stay hot longer.
