Title: Pork and white wine casserole
Post by: Sugar&Spice on July 16, 2013, 01:05:27 pm

Hi there  :) this is my first contribution so please forgive me if I have not written this correctly.
I was searching for a nice pork casserole recipe and found it difficult to find one. I ended up making this up myself and it turned out to be pretty good so I thought I'd share.  I hope you enjoy it as much as my family did - my 2 year old had a number of serves so I was very happy :)

Pork and white wine casserole

Serves 4

1 small onion
1 garlic clove
1 tbs (20g) olive oil
1 small carrot
2 sticks celery
300-400g pork scotch fillet, cubed
1/2 cup white wine
Tomatoes tin
1 bay leaf
1 tsp veg stock paste
2-3 mushrooms
1 large zucchini
Freshly ground pepper

Chop onion and garlic speed 5/5 secs. Add oil. Cook varoma temp/speed 1/2-3mins. Add carrot and celery speed 5/5 seconds. Cook varoma temp/speed 1/2-3 mins. Add pork and cook until brown 100c/ :-: ^^. Add white wine, tin tomatoes, bay leaf, pepper, stock paste, mushrooms (chopped), zucchini (chopped) & pepper. Cook 50-60 mins 100c/ :-: ^^/mc off until meat is tender.
Serve with mashed potato or pasta

Thank you for your nice words. Looking forward to contributing more recipes as I go along.
I meant to say the pork fillet should be cubed but I guess that is pretty obvious being a casserole recipe.
