Title: Quirky Jo's creamy chicken and brown rice soup
Post by: Thermesa on July 14, 2013, 12:55:28 am
I have this on my to do list and I have two questions.

Can I use my leftover pulp from almond and rice milk instead of a fresh mill ? (I'm guessing the flavour wouldn't be as rich).

I'm out of celery. Can I substitute silverbeet stems?

Thank you for your thoughts

I'm not sure about the pulp bit but I don't see what you couldn't use silver beet stems. They would have a stronger flavour though. I'm sure you could just leave the celery out if you didn't have any.

I have made this soup, it's awesome. I think you could use the pulp for sure, I think it is used for more of a thickener rather than for almond  flavour.

Thank you
I decided to stick to the basic recipe first time. I seem to tweak most things and have nothing to compare it too. I agree, it did seem to be thickener. I used cashews this time but will get that pull into something this week. Maybe porridge I could have used it in my cheesecake base on Saturday.

The nut pulp is handy for smoothies too.
Sometimes I freeze it into ice cube sized portions.

I threw the pulp into a loaf of varoma bread. Adds an interesting texture and happy with the loaf.

I found this recipe tasteless, followed recipe to a tee! Just didn't like the texture, too thick and just not enough flavour. I even added Thai curry paste but still didn't like it.  :(
