Title: Mixing dough Advice needed

I've been having a ball making  breads and scrolls the last couple of weeks, one thing I notice is most recipes say after adding all ingredients to mix on 2 or 3 for 20 seconds, my machine starts to sound really stressed in the last 6 or so seconds as the mixture comes together, so much so that I turn it off.. I then switch to dough mode and its perfect...      Is this normal ????      Thankyou

BT,  I never do the premix as I don't think it is necessary.

I used to and my machine did the same as yours. I just start the kneading as Chookie does.

I always give a quick spin at speed 3 until everything comes together and then go to the kneading.

Anyone know the maximum flour weight for kneading in Thermie?  ???

Max 600g flour for bread, or 750 for more liquid dough.

i sometimes turbo the dry ingredients a few times ,after that i add the warm water

During these cooler months I put the liquid in and the yeast and sugar and cook it at 37 degrees for 2 or so minutes. I then add the dry ingredients and salt and knead.

That is interesting cookie. Seems like we all do something different or the same and we all have learned to make food bread . Gotta love your Thermothingy.

Love this thread.  This morning I put 100g of 1/2 frozen mixed grain and seeds in TMX,  added boiling water,  mixed it a little, and then tested temp on TMX.  When it was 37, added flour and yeast.
