Chocolate Wheaten
I got this recipe from woman's weekly and adapted to TM.
Ingredients
90 g Butter
100 g Brown sugar
1 Egg
20 g Dessicated coconut
35 g Wheat germ or Rolled Oats
100 g whole meal plain flour
50 g Self raising flour
180 g Dark chocolate melted (I used milk choc)
Directions
1) If using Rolled oats whizz in TM for 10 sec speed 7 and set aside.
2) Place butter and sugar in TM, mix 30 sec speed 4, scrape down sides and mix further 10 seconds.
3) Add egg mix 10 seconds speed 4.
4) Add Coconut, wheat germ or oats and both flours. Mix 5 seconds speed 5. Then turn dial to locked lid position and knead for 1 minute or until combined.
5) Tip dough out between 2 sheets if baking paper and roll out to around 5mm in thickness. Place in refrigerator for 30 minutes.
6) Preheat oven to 180 degrees.
7) Cut out 7.5cm rounds from the dough and place on trays lined with baking paper.
8) Cook 15 - 18 minutes or until golden brown. Leave to completely cool.
9) Spread melted chocolate on top of each biscuit and leave to set.
Notes.
(I melted chocolate in microwave and then sat the bowl over a pot of boiled water to keep chocolate from setting)
I used rolled oats as I didn't have any wheat germ available, they still turned out well.

dede - I really like these biscuits, they have a great crunch and really taste like chocolate wheatens. Think they will become a regular in this house.
jo nz - Going to make my second batch of these today. I made some in the weekend and gave half to my SIL, and ours are all gone - loved by everyone. Thanks!!
CC - in regard to a question as to whether the butter has to be softened.
I remember Mary Berry saying if the butter is "too soft" ( a classic mishap in the microwave) the biscuits will spread.
Mary's Butter Softening tip
"Simply cut it up into cubes straight from the fridge and place it in a bowl of tepid water (not hot- trust me, hot water makes a BIG mess!). Leave for just 10 minutes - usually the time it takes to measure out the rest of a cake ingredients, drain the water away and it’s perfectly soft and ready to use."

Lol. Hope you like them. :)

these look amazing - do I need to soften the butter first?
-
It would pay to have it at room temperature lexi.

If I remember correctly, I think it was Uni who gave the advice that if the butter was too cold, to just grate it . . . .it worked for me with the biscuits I was making at the time . . . :D
-
GF i have used that tip too. It worked a treat.

CC do you put the cubes of butter directly into the water? If it comes straight from the fridge and I need softened butter I normally put in the MW for 20 secs or a bit less. Eggs are always best used at room temp also which takes at least 30 mins pre-planning. Broke my rule yesterday of never eating "bought" biccies and bought some of these from the supermarket, so I WILL make some of these when my packet is empty.

You put the cubed butter in the water CP. Here's a photo ;)
