I have used this recipe for a while now and it makes delicious traditional ANZAC biscuits. It is from the NSW CWA Cookbook called Jam Drops and Marble Cakes and I have converted it to TMX.
The recipe makes 40 x 5cm sized biscuits
Ingredients:
125 grams butter
1 tbsp golden syrup
180 grams brown sugar (recipe is for 220g of sugar but I find 180g is enough)
95 grams rolled oats
90 grams desiccated coconut
150 grams plain flour
1 tsp bicarbonate soda
2 tbsp boiling water
1/2 tsp salt
Method:
Preheat oven to 180°C (160°C fan forced).
Add butter and golden syrup to TMX and melt 2 mins / 80°C / speed 2.
Add sugar and melt 1 min / 80°C / speed 2.
Put the bicarb soda In the MC and combine with the boiling water until dissolved.
Add oats, coconut, flour, salt and bicarbonate and water. Mix Reverse / speed 4 / 10 secs.
Place spoonfuls of the mixture onto lined baking trays and bake for 10-12 mins. Allow to cool on tray.

Watch out, they disappear quickly!
Note: they also have the 1914 version in the book which is similar but has no coconut (double the oats) and only 165g of sugar so the recipe should work with anywhere between 220g and 160g of sugar depending on your taste.

Kimmyh - they are delicious. Have been making Anzacs for years using AWW recipe. These are better. Thanks snappy.
mcmich - very nice. Thanks for the conversion Snappy.
maddy - they were lovely snappy. I find different recipes can be hit or miss, but these at 10 mins cooking, were chewy how I like them....not break a tooth hard.
Gert - Just made a batch of these for some visitors. Delish.
Suzanne - The EDC ones are dreadful - these are delicious, thanks snappy.
Denzelmum - We made this today, yum!
djinni373 - I made these on Anzac Day and decided to add about 1/3 cup each of dried apricots and dark choc chips. Not traditional but very yummy. Thanks for converting Snappy.

Made these again today as some "travelling nibbles" for DD who was moving to Canberra to start a new job. They're wonderful! Djinni, I've made a note to try the addition of apricot/choc chips next time... sounds very delicious! :)
-
I hope DD loves it here Goldfish :)
-
I may be lucky enough to accompany DD to Canberra next year. She has a conference there. I will hopefully be able to catch up with my brother over there.
-
I love to visit Canberra. Don't think I would like to live there but it is an interesting place and central to a lot of other interesting places. It can be very beautiful .

I hope DD loves it here Goldfish :)
I hope so, too, Jamberie. I just wish Canberra was a little closer to Sydney ..... :)
-
We understand Goldfish.
Lucky you cookie, that will be wonderful for you both.
-
GF at least he didn't move to Perth. Poor CP copes with some DD/DS away.

I think Canberra is a great place to live. The winters are cold but at least she's moving here in summer :)
My DB moved to Sydney from Canberra a few years ago gf, we too wish it was closer- but then again it could be much worse. And the Hume and Federal highways are so good these days. Is she staying Northside or Southside?
-
Thanks Bedlam... I know Cookie! That's what DD said-3 hrs by car beats clear across the continent!
-
Hi Jamberie... DD is in Kingston. I'm not too familiar with the geography of Canberra but I have a feeling that's going to change ;)
Yes... Remembering back to when I was a teenager, the drive to the ACT took twice as long as it does now . DD says its really hot down there today and unfortunately she has hay fever .... Hopefully that won't last too long.... She thinks its the pollen....
-
She will love Kingston GF (and you will too). Lots of foodie places, bars, cafes etc. not far to walk around the lake and the main touristy things are very close for when you visit (many of the major places have high quality cafes and restaurants). Ah yes, hayfever is a pain here in spring and we do have a high pollen count at the moment too. We have our air con on today :o
-
Ypu will have to visit The Old Bus Depot markets, they are in kingston and have a great mix of things :)
-
Ooh I've been to those markets Jamberie. I'm glad I don't live in Canberra if the pollen count is high. I have enough trouble over here.
-
I have tried these with Nuttelex to make them dairyfree but not very successfully.
Usually Nuttelex works well but not in this case.
Does any one have any suggestions for substituting butter.
I have also tried coconut oil but also not successful.
-
Thank you for the recipe! Yum!
-
I just made three batches for our community. Delish.

Well done Gert. I'll bet you were popular.
