Title: Hollandaise sauce - Everyday cooking

Well, my beloved TM has really earned it's keep today.
We've had 10 guests to lunch and I made hollandaise sauce from this cookbook and was just amazed at how perfect this sauce was - both in taste and consistency. It took just 8 minutes, from scratch to putting a perfect sauce into my sauce boat.
It went with the salmon beautifully.
I also made lemon curd to add to creme fraiche for the pavlova topping and a lovely strawberry sauce, also from the same book, to pour over my lovely little pannacottas. I used Tenina's pannacotta recipe, as mentioned this week here, and was delighted with them. You don't get much easier or quicker than these.
The Thermomix was the star of the show today - without a doubt.
How could I ever have managed without it? To think that I took months to make up my mind to buy it???
It is a treasure and often gets a little kiss when I am drying it up after washing.I don't care who thinks I'm bonkers, I really love my new baby. Do give the hollandaise a go - the recipe is superb. Gone are the days of ditching curdled sauces! I am one happy bunny.

Easy hollandaise was the reason I originally started researching the TMX a couple of years ago. I've always found the recipe in the EDC works perfectly although I use the base from Stephanie Alexanders recipe for a bit of extra flavour, and we also love it with grainy mustard added for when we have hot corned beef.

Wow Kyton, that's a lot of eggs and butter a couple of times a week. Do you half the recipe?

Wonder I haven't tried halving it yet - I was wondering if it would work.

Has anyone else tried halving the ingredients?

My DH has he reduced the cooking time by a few minutes I think and it worked well.

A customer wanted to know if the TMX could make decent Hollandaise so I made it for her and now I'm hooked.  Thankfully we've gone "all Atkins" here so its very Atkins friendly.

Does anyone know if it can be reheated - will it "keep" in the fridge for a day or two?

it keeps well in the  fridge but i have never reheat it, bring it up to room temp and use

I've kept it in the fridge for a few days and gently heated it in the microwave on slow. It's not as good as when you first make it, but makes do and saves the waste.

 Same here Uni. I keep it in the fridge for weeks at a time by turning it upside down.  I have warmed it but it is best at room temp.
