Title: Apricot & Coconut Balls page 166 Baby & Toddlers Book
Post by: judydawn on May 21, 2013, 09:50:40 am
A healthy snack, they taste good and are quick and easy to make - the kids could make their own ;D  I had no wheatgerm so used 2 tblspns oatbran instead.  They have a softish centre and I keep mine in the fridge.

Now I have to find someone to help me eat them CC, perhaps I can take some to the nursing home for our visitors.  I was reading the book whilst Geoff was having a big nap and in the end I had to go home and start cooking  :-))

Astarra my recipe for apricot balls on here doesn't use orange juice and has no sugar. You could try them instead.

Made these yesterday. Didnt have wheatgerm so used flaxmeal. Not too sweet and soft enough for my almost 1yo to eat. Definitely will keep these in the fridge for a quick snack. Love that I can take a few of these to work if I get a 3pm sugar craving!!

I made these on the weekend for a 2 year birthday party I went to, they were a winner & amongst all the cakes & lollies a good option.  Very easy & quick to make.

Made these with DD tonight. Didn't have any orange juice so I didn't use any, they were still yummy and will be making them again!

I made these this week for DH lunchbox & instead of using store bought OJ just squeeze my own. Nice snack for any age.

Your posting reminded me that I still had some of the batch I made almost 2 months ago in the fridge kmw - still as nice as the day I made them  ;D

Mmm. I can't stop eating them... Each time I've walked past the fridge I've just had to try them again to make sure they are still okay ;)
I'm embarrassed to say how many I have left.

Love your photo Jamberie. Very professional looking.

I made these tonight and my toddler saw me making them so she brought a chair over to get up to the bench and ask for one. She happily ate it and then asked for 'more'. She also used one of the balls I gave her to copy me making them.

I bought wheatgerm specifically for this recipe as I had not used it before. I think it's in there due to all the goodness in it. Didn't have OJ so just substitued another spoon of water.

Personally, they were not sweet enough for me but that didn't stop me and the others gobbling them down. They do look good and I think if I had the other darker organic apricots they would be nicer.

Made these today after DS number 4 had been through the book ages ago and has been begging me for them (bad mummy making him wait lol) They are really easy to make. I just milled down some rolled oats as I am wheat free and that way I could have some too  :D :D

Yes I feel quite the same Brumington.  I thought with no littlies perhaps this is the one book I can justify not having  :D

My daughter made these yesterday and have to agree with everyone - they are delicious and hard to stop at one.  My grandson (3) keeps asking for more.  :D

I made this with the boys today for their lunchboxes this week.  I do not have any wheat germ so used a suggestion on recipe community and added one finely ground weet-bix (grind first and set aside).

As the boys did the rolling our balls are not as beautiful as those already posted so I won't add a photo but they seem to like them and are so proud of their efforts. It's a great recipe for primary school kids to make themselves 😀😀😀

For anyone who does not have the book (like me 😯😯😯) this recipe is available on the recipe community site.

I substitute chia seeds whenever wheatgerm is called for in recipes.  I usually soak them for a while in some of the liquid from the recipe, don't know if this is entirely necessary though.
