I'm not sure if anyone has linked to this site before. I'm not a huge fan of freezer foods but some of her recipes sound good and would be handy to have some on stand by.

I think it's a great idea. Especially if you have little children or are a working mum.
I found my slow cooker (or crock pot it was called) a life saver when my children were young and I worked. I would get home from night duty prepare dinner and it was ready when I got up in the afternoon. Having the veggies already prepped would be a bigger bonus.
I was thinking of astarra when reading this as she peels her potatoes in one go for the week. :D

how do you store your pre-peeled potatoes without them going off or going funny? and do you know whether they retain their nutrients?

i store peeled potatoes in a large bowl filled with water and change the water every 2nd day the same can be done with onions

I have no idea about the nutrients sorry, but all I do is peel 4kg (enough for our family for a week) and chop, then either boil or steam them, oil them and cover with gladwrap (on a paper lined oiled tray) and keep in fridge or freeze in freezer bags in meal sized lots. They seem to stay fine and look exactly the same. I also do the same with kumara and pumpkin. :) HTH

Thanks for sharing your method astarra! I think I'll have to try it.. DH loves potatoes bit I rarely cook them because I can't be bothered with the prep! If I did it all together though I might be more inclined.

i thought this was a great idea until i read a comment where she said her dh loves his vegies soft or mushy ...put me off but noticed she has a few recipes on her blog so might try one out to see from freezer...hate mushy anything!
Astarra how have you found the recipes.. Not too mushy?? They look good for quick healthy meals to have in your freezer..
